Oh-So-Easy Vegan Pancakes

What you need: 

2 cups flour (I like to use I cup whole wheat and I cup enriched white)
1 teaspoon baking soda
1 teaspoon baking powder
2 cups soy or rice milk
2 tablespoons oil

What you do: 

Mix flour, baking soda and baking powder together. Add milk and oil until just mixed. I use an electric fry pan, but a frying pan on the stove works fine too, but don't forget to put a little oil on whatever you use to cook them with. When cooking cover the pan with a lid. Cook until brown on both sides. You can add raisins or whatever you like in them.

SO HOW'D IT GO?

Simple but delicious. I added a couple tablespoons of carob powder, honey, and banana slices and it tasted great! I also used rice milk instead of soy. Thank you for sharing the recipe.

I read the other reviews and used vanilla soyamilk and added several heavy shakes of cinnamon.  I liked them quite well, but my omnivorous breakfast mates weren't quite so keen unless they were smothered in jam.  Next time I think I'll try adding bananas.  Very simple to make!

So simple and tasty...even better than the egg/dairy pancakes I used to have. I enjoyed the one cup whole wheat one cup white. Definitely 5 stars with the cinnamon!

I halved the recipe (as it was just me eating it and didn't want to eat it all and turn into a blimp!), and it was still enough for say, 5-6 medium-sized pancakes and added 2 tsps of cinnamon, 1 tsp of vanilla essence and 1/2 tsp of sugar.

This recipe was so good. Took me about 5 minutes max to prepare (I refridgerated the batter before using it, as I always find that it makes a tougher pancake that doesn't fall apart). Each pancake was done in about 2 minutes in an oiled wok.

I ate mine with lemon and sugar, and it was so reminiscent of the pancake day I used to celebrate when I was kid. These were seriously so convincing! When the batter alone tasted good raw, I knew I was onto a good thing  :)

These definitely did the trick! Just like non-vegan pancakes, I found.  I did modify a bit...I added a splash more soy milk as I found the consistency a bit thicker than I'd prefer, and I also added about 1.5 tablespoons of sugar and a shake of nutmeg and cinnamon to the batter.  Fried them in a pan with a bit of veg. oil and....delicious!  I served them up with some Yves Veggie Bacon Strips and a glass of orange juice.  A good hearty Sunday morning brekkie.

I have a son with milk and egg allergies and was so happy to find this website.  After 6 or 7 other vegan pancake recipes, I was so happy to find this one that my other non-vegan children will eat also.  I used vanilla soy milk and carob chips, sorry that I had no cinnamon left though.  These were the only pancakes that I have made that were the same consistency and texture as "regular" pancakes.  Perfect!!!!  Thank you

This recipe really is so easy! I used oat bran instead of white flour and the results turned out wonderful.  I also added carob chips and peanut butter to some of the pancakes I fried since I am a PB fanatic and since I ate these for dessert.  I have tried other vegan pancake recipes and this one yielded the best results by far.  The only challenge I faced while making this dish is that the batter tends to get a bit dense/lumpy/thick as  it sits in the bowl while the other pancakes fry on the skillet but I solved this problem by adding water as needed.  The thicker the pancake, the longer it takes to fry.  If more water is added, the pancake turns a bit flatter.  But I like having a variety of pancakes textures - both thick and thin - so this was a plus on my side.  I HIGHlY recommend this recipe.  After all, I prepared this twice in one day for myself!  And I will be using this in the future!  :)

Im a good cook when it comes to stir-fry and baking but have never been able to make decent pancakes. I used brown rice flour. And although a little grainy Im very pleased. It's good I was only making them for myself. I love your recipes. Yummy!! :) Oh and I also used wild blueberry syrup. Wow!

I made them this morning. My antiveggie boyfriend didn't seem to like them. I have some batter left and a really ripe banana. I think I will eat some tommarow with a banana for sweetness. I thought they were good... of course I like soy stuff. :)
