Cocoa Flapjacks

What you need: 

1 cup whole wheat flour
1/2 cup flax meal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup cocoa powder
1/4 cup sugar
1 cup soy milk
2/3 cup water
1/2 teaspoon vanilla
1/4 teaspoon cinnamon

What you do: 

Mix together dry ingredients and then add wet. Stir vigorously until well-mixed.
Heat heavy pan with a few drops of olive oil (or use nonstick pan). Cook 1/3 cup of batter at a time, until mostly cooked on the first side, and flip and cook the other side (cook longer than you would think). Example, if it takes 5 minutes to look like the side up is almost cooked, flip and cook the "cooked" side up for the same amount of time.
It is very easy to undercook these!
I usually keep the cooked flapjacks in the oven on warm until all of the batter is cooked.
Spread vegan margarine and sprinkle with vegan sugar, or use a small amount of vegan maple syrup.

*Also, you can add carob chips or vegan chocolate chips to the batter for a tasty "chocolate chip cookie" treat, but then forget about the sweet toppings!*
