I made these again today, with brown-rice flour and added a little cinnamon to the batter. Really good.

Vidalia onions are like those large, sweet white onions. But red onion is good too because it's sweeter than the Spanish onion kind.

Well, the use-uncooked kind, yes. But Shelloid says if you have plenty of sauce in the dish and cook it uncovered for 45 min you can use regular noodles as well.

Simple and delicious! This is one of those dishes that gets better the longer it sets.  A lovely light summer meal with crusty bread.

That "large" potato had better be very large, to feed 3-4 people, even as a side dish.
For "Catalan toast" use this sauce on toasted baguettes. First add a drizzle of olive oil, then the tomato sauce. In bars, they use a small paintbrush to dab it on!

Today I substituted black-eyed peas instead of garbanzos in this dish and it came out delicious. A bit creamier, and a lighter flavour.

OOOPS!! The ingredient list should include 1/3 cup of white vinegar! Sorry about that. Don't know how I skipped that out!!

This stuff is gorgeous! My peas took way more than an hour to become soft, more like 3 hrs, but it could be cause they're from Peru, maybe they're a different kind.
