Delicious. Perfect soup for a stormy, rainy night. I added sliced portobellos (gave the soup a "beefy" taste since I was fresh out of the no-beef bouillon) and didn't use any cheese.
One of my major weak spots is a quesadilla with Vegan Gourmet cheese. Whenever possible I try to make a healthy (okay, healthi[i]er[/i] ::)) homemade version. This bean spread was AMAZING.
These are great! I'm bringing these to a vegan potluck tonight. Soo easy! I subbed cornstarch for arrowroot, added about a tablespoon of agave, and added 2 teaspoons of amaretto liquor.
