Vegan Banana Waffles

What you need: 

1 3/4 cups nondairy milk
1/2 cup vegetable oil
2 cups whole wheat flour
1 tablespoon brown sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 banana

What you do: 

1. Pour nondairy milk and oil into large mixing bowl. Mix dry ingredients together. Combine wet with dry.
2. Blend banana in blender. Preheat waffle iron according to manufacturer's directions. Pour batter into the blender a little at a time and blend thoroughly with banana.
3. Scoop batter into 1/4-1/3 measuring cup and pour into waffle iron. Let cook for about 5 minutes, or according to directions.
4. Remove waffles with a fork and let cool on wire rack. Serve with jam and/or maple syrup.
I usually make 2 batches at a time and freeze them for later.

These were pretty good. I did cut back to 1/4 cup oil and added 1 tsp cinnamon. I also replaced the brown sugar with 1 1/2 tbs agave. I didn't get what I would consider 14 servings though. My round waffle maker came up with 6 waffles.

Yum!  My husband even liked them and said "they don't even taste healthy!"
I halved the recipe and got four square Belgium waffles. 
I made the following modifications (for a half recipe):

A whole, small banana and a 1/4 cup applesauce instead of the oil
1 Tablespoon brown sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
a few shakes of cinnamon
a small pinch of nutmeg

They were delicious! Browned on the outside, but still soft in the middle  ;)b

These were great! I got my mother a waffle maker for Mother's Day so we decided to try these out. I loved how I had all the ingredients just laying around the house. It was super fast and easy and I thought they were delicious. I added a tablespoon vanilla to mine to add a little something extra. My mom thought they weren't sweet enough, but I thought they were absolutely perfect. :D I'm getting hungry just thinking about them again.

I just made these and they were awesome! I had to use all purpose flour because that's what I had around. I did add 1 teaspoon of vanilla extract and 1/4 teaspoon almond extract for flavor. Great recipe that I will be saving for later.

I made a half batch this morning, with the following modifications:

white flour instead of whole wheat
vanilla soy milk instead of rice milk
less baking powder (1/2 tablespoon, or 3 teaspoons scaled up to a full batch)
added a bit of vanilla and an extra pinch of salt

I didn't use a blender.

The texture is lovely: moist and creamy on the inside with a light crispy crust.  The flavor is not bad, but a little plain, which is why I tried to doctor it with salt and vanilla after tasting.  Next time I might try a bit of lemon or cinnamon, or just use more banana.

Mmm I tried these this morning and they were fantastic!My mom and I loved them.I added cinnamon and cut the ingredients' measurements in half.Thanks for sharing! ;D
