1 cup vegan mayonnaise
1 tablespoon brown rice syrup
3 teaspoons apple cider vinegar
2 teaspoons poppy seeds
2 (14-ounce) packages extra firm tofu, cubed
3/4 cup pecans halves
3 celery stalks, chopped
2 cups red grapes, halved
1/4 cup chopped green onion
your choice of greens, to taste
lime wedges, to taste
1. Dressing: In a bowl, combine the mayonnaise, rice syrup, apple cider vinegar, and poppy seeds. Refrigerate.
2. Cube the tofu and bake in oven at 350 degrees F for 30 minutes, or until golden brown. Leave tofu in the oven while it cools to make sure it firms up.
3. In a bowl, combine baked tofu, pecans, celery, grapes, and green onion. Drizzle with dressing; mix well.
4. Serve tofu mixture over greens. Garnish with lime wedges.
You may also serve it on bread as a sandwich. Very good!
