Tofu Chicken Salad

What you need: 

1 (12-ounce) package firm or extra-firm tofu, pressed, cut into bite-sized pieces
2 to 3 stalks celery, diced
3/4 cup pecan halves
1/3 cup halved seedless grapes
1/2 cup vegan mayonnaise
pinch white pepper
onion salt, to taste
paprika, to taste

What you do: 

1. In a bowl, combine tofu, celery, pecans, and grapes.
2. Add mayonnaise, pepper, onion salt, and paprika; gently toss to combine. It's great in a pita or with vegan crackers.
