Super Quick Pumpkin Pudding

What you need: 

1/2 cup canned pumpkin, chilled
1-2 teaspoon sweetener- agave, maple syrup, or raw sugar. Or, use a few drops of Stevia.
1 tablespoon soy or rice milk
sprinkling of cinnamon
optional: sprinkling of cloves or nutmeg

What you do: 

Mix pumpkin, sweetener, soy milk and cinnamon, and enjoy.
If you like this warm, warm it up, but I think it's best cold. Frozen for a half hour or so, this makes a great ice cream.

I've been making this alot lately and changing up the sweeteners, my fav being 2 tsps agave.  It is more pumpkin pie to me than pudding but still very good and simple, I also add extra cinnamon, a little pumpkin pie spice and vanilla.

this is so yummy! i had gum surery today and i need to think of new redipes and foods to eat! (non-solid, soft, and cold) i so i found this one and followed this exactly only i doubled it.
1 can of pumpkin, 2 tbsp almond milk, 2 tsp maple syrup, and mix of cinnamon, nutmeg, and pumpkin pie spice) i put mine in the freezer for 1- 1 1/2 hours and it was perfect. although i cant wait to try it waned in the oven but that will be aftre my recovery.

no way!  I was just about to submit a recipe VERY similar to this....I had about half a can of pumpkin leftover from another recipe, and I whipped up a quick pudding just like this one, only with molasses in place of the sweetener!

so as someone who has preeeety much tried this already, I recommend using molasses for the sweetener as it compliments the spices quite well....this is a really yummy and healthy snack!
