Soy Croquettes

What you need: 

1 cup dry soy beans, soaked overnight
1/2 cup dry brown rice
1 onion, grated
2 tablespoons peanut butter
1/2 cup parsley, chopped
1/2 cup carrot, grated
1 cup wholemeal breadcrumbs
1 teaspoon salt
sesame seeds, as needed
olive oil, as needed

What you do: 

1. Preheat oven to 320 degrees F, if baking. Cook soy beans according to package directions, until tender. Mash beans while they are still hot as they will harden as they cool.
2. Cook rice according to package directions. Combine all ingredients, except sesame seeds and oil, and mix well. Form mixture into patties or croquettes, and roll in sesame seeds.
3. Gently fry these in a non stick pan with a small amount of olive oil on both side until they appear well cooked, or bake in the oven on an oiled tray for 25 minutes.
