2 cups cold cooked brown rice
3 medium onions, chopped
3/4 cup pecans, chopped
1 1/2 cup tofu, mashed
3 tablespoons soy flour
1 teaspoon sage
1 teaspoon salt
1 tablespoon fresh parsley, chopped
bread crumbs, as needed
1. Preheat oven to 350 degrees F and lightly spray baking sheet with nonstick spray.
2. Mix all ingredients, except bread crumbs, together lightly with a fork.
3. Form in oval shapes, or drop from 1 ounce scoop into vegan crumbs. Place on prepared baking sheet, and bake for 25 minutes.
Use a "chicken" gravy to pour over top and serve immediately.
