Quick Vanilla Pudding/Filling

What you need: 

1/3 cup flour
1/3 cup sugar
1/2 teaspoon salt
2 cups soy or rice milk
1 tablespoon margarine
1 teaspoon vanilla
1 pinch cinnamon (optional)

What you do: 

Stir flour, salt and sugar together in a medium saucepan. Without turning the burner on, add soy milk, one cup at a time, and whisk until no lumps remain.
Place saucepan on medium heat, stirring occasionally until pudding begins to boil. Stir continuously until pudding coats the back of the spoon.
Remove from heat and add margarine and vanilla. Chill at least 20 minutes.
This is quick, simple, cheap, and great filling for cakes and pastries as well as on its own. Try it with sliced bananas.

SO HOW'D IT GO?

I made this to go with strawberries and pound cake in a flan-type thing and oh my god, it's so good! I think I've eaten half of it already and it's not even on the cake yet!  :)>>>

No offense, but i was really sceptical about this recipe! it seemed too good to be true: quick, easy, no weird ingredients. i thought it wouldnt work. but it was AMAZING. SOOOOOO good! i made it for this lunch my mum was going to with her friends, because she didn't have time to make something. she wanted me to make something with "Bird's custard" but i thought a vegan one would, of course, be better. its fantastic. i made it with ww pastry because that's all i had. its SO GOOD. it'd be divine with bananas, or, as they will be eating it, with fresh picked blackberries =D
