Pumpkin Raisin Rice Pudding

What you need: 

1 cup cooked brown rice
1 cup soy milk
1/2 cup raisins
1/2 cup vegan canned pumpkin
1/4 cup vegan fructose
1/2 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon ground cloves
1 teaspoon vanilla

What you do: 

Combine all ingredients except vanilla in a 2 or 3 quart saucepan and simmer for 15 - 20 minutes, until mixture starts to thicken. Remove from heat, add vanilla and stir to combine. Can be enjoyed warm or allowed to cool. Mixture will thicken more with cooling.

This was very tasty.  A good way to use up leftover rice.  Next time I will try it with some vegan whipped cream on top.  Oh la la.
