Quick Vanilla Pudding/Filling

What you need: 

1/3 cup flour
1/3 cup sugar
1/2 teaspoon salt
2 cups soy or rice milk
1 tablespoon margarine
1 teaspoon vanilla
1 pinch cinnamon (optional)

What you do: 

Stir flour, salt and sugar together in a medium saucepan. Without turning the burner on, add soy milk, one cup at a time, and whisk until no lumps remain.
Place saucepan on medium heat, stirring occasionally until pudding begins to boil. Stir continuously until pudding coats the back of the spoon.
Remove from heat and add margarine and vanilla. Chill at least 20 minutes.
This is quick, simple, cheap, and great filling for cakes and pastries as well as on its own. Try it with sliced bananas.

SO HOW'D IT GO?

Yeah...it sounds like you guys are not letting it mix thoroughly before turning the heat on.  Note where I said to add the milk slowly before turning the burner on.  Sloooowly, whisking while you do.  It should not be lumpy at all when the heat is turned on, but perfectly smooth.

veganamanda, if it isn't thick before it cools, you've done something wrong.  Cooling only thickens it a bit. 

buongustaioit, thanks for the more expanded directions. I'm surprised it thickened at all with Truvia!  That's awesome.

I was really excited about having pudding, but this came out horrible! Like someone else said, it came out clumpy and too salty. Nothing like the pudding of my non-vegan days.

First off- it started to clump way before it boiled. I stopped stirring for about 15 seconds, and it had clumps in it, even though the directions say "stir occasionally until boiling". Also, this serving size really isn't accurate. I cut it in half and it only made 1 serving. And 20 minutes is definitely not enough for cooling. It needs an hour, at least. Mine had a film on it when it came out of the fridge, not very appetizing!

Maybe the directions are poorly written, but as-is this is not 5 stars!

I will try it again because the taste it got using Truvia is not too attractive ;P I had to pull a backflip to make it taste passable but all in all it's a good recipe.

Hey Foodfreak, if you follow the instructions to the Tee then it should work for you too. The fact that you have lumps sounds due to not mixing well at start and/or heating up to quickly possibly not stirring constantly.

My advices would be:
- Mix dry ingredients well,
- Add soy/rice milk very slowly,
- Pour 1st cup until in splashes and whisk until you get a homogeneous smooth thick "paste" consistency,
- Pour 2nd cup also in splashes to make that paste more of a liquid velvety appearance,
- turn fire on low,
- heat up for a few minutes then gradually increase fire to mid then high over the course of 10-15 mins
- use a whisk to mix constantly,
- stay on high flame only for a couple minutes then bring down to medium fire and continue to stir,
- wait until the mix thickens,
- check thickness by lifting the whisk, if the mix sticks slightly to it and has gooey consistency you can urn fire off and place the mixture the final cups that will contain the pudding.
- let it cool down then enjoy when ready ;)

this was OK :(. it was kinda sweet and there was a whole bunch of flour chunks. if anybody can help me please do because i had high hopes for this

I just made this so it is still cooling but licking off the spoon was heaven :-D.  It is not too sweet.  I decided to make lemon pudding instead so I added a little yellow food coloring and used lemon extract instead of vanilla.  Thanks for this quick, easy and versatile dessert.

ok so.... it's not that this tasted BAD per say..... it's just that I felt like I was eating gooey cake batter  :-\

Thanks for this quick and easy recipe, it was exactly what I was looking for to satisfy my late night desert craving! I added a handful of mini semi-sweet choc. chips (Enjoy Life brand). Very good! Will definitely be a staple from now on.

Awesome! 

I don't usually enjoy the tofu taste of soy pudding.  With unsweetened almond milk this was the best pudding I ever had, and so easy.  I do plan to try cutting the sugar a bit next time, maybe to 1/4 cup.

AMAZING!!!  and easiest pudding EVER!  i modified it for 1: 3 tbsp flour, 1 tbsp cinnamon sugar, 2/3 cup vanilla soymilk, NO margarine ( :)), a tad almond extract....let it chill, now eating with chopped apple, almonds, raisins, and a splash soymilk....VERY nice change from my normal cereal dessert - thanks!!!
