Protein Pudding

What you need: 

2-3 packages silken tofu (drained)
3-4 scoops vanilla protein powder
2/3 to 1 cup apple sauce
splash vanilla (optional)
a few 3-5 drops almond, banana, OR coconut extract (optional)

What you do: 

This recipe is *very* versatile. You could use any kind of protein powder and/or any kind of apple sauce. You could even use mashed bananas instead of apple sauce. The possibilities are pretty much endless so I suppose it's more of an idea than an actual recipe.
To drain the tofu: Place 1-2 paper towels or cheese cloth in a strainer, place the strainer over a bowl (to catch the water), add tofu and mash it a little, allow to drain for a while so you get most of the water out. To speed up the process I like to put a bowl with a can of beans or something heavy in it.
Put all ingredients together in a bowl and mix with an immersion blender until you get a smooth even pudding. You could also do this in a blender, I suppose.
I like to serve it with diced fresh fruit and (high protein) granola. It makes a very nice breakfast and/or dessert and it's a really nice way to add protein to your diet.
