Peanut Butter Cookies

What you need: 

1 1/4 cups whole wheat pastry flour
1/2 teaspoon salt
1 teaspoon baking powder
1/4 cup corn oil
1/2 cup peanut butter
1/3 cup maple syrup
1/2 teaspoon vanilla
1/4 cup soy milk

What you do: 

Pre-heat oven to 375 degrees F. Combine whole wheat pastry flour, salt and baking powder.
Beat together oil, peanut butter, maple syrup, vanilla and soymilk.
Stir wet ingredients into dry ingredients.
Drop heaping teaspoonfuls of mixture onto lightly greased baking sheet and press down to about 1/2 inch depth with a fork.
Bake for 10 to 12 minutes until brown at edges.

I chose this pb cookie recipe because I was out of EB and didn't have time to go to the store...
I followed the recipe pretty closely, but I used white flour instead of wheat pastry flour...and I added a little applesauce for some more moisture....but they still came out pretty dry....good flavor, just not moist enough (ugh, I hate that word)


These *just* came out of the oven and I must say - they are FANTASTIC. My modifications were:
- I used 1/4 cup cashew nut butter and 1/4 cup almond butter as sub for pb
- added 1/4 cup of cane sugar, decreased maple syrup to 1/4 cup
- used 2 tsp vanilla
- used a generous amount of Himalayan sea salt (because I love that salty/sweet combo in my nut butter cookies)

Just... just wow. I mean, the texture *is* different from other margarine/coconut oil based cookies, but that is not at all a bad thing when you factor in how yummy they are.

Yum!  Doubled the recipe, used half white/half whole wheat flour, 1/3 cup sunflower oil, some baking soda, 1/2 tsp. cinnamon and half a ripe banana.  Great no-margarine peanut butter cookie.  The texture was a little different, but did not offend my nor my omni brother and omni boyfriend's palates. Happy all round.  :D
