Banana Oat Cookies

What you need: 

2 cups mashed bananas
2 cups caster sugar
2 cups brown sugar
2T Ener-G Egg Replacer + 1/2 cup water
2 teaspoon vanilla
1 teaspoon salt
2 teaspoon baking soda
4 cups flour
5 cups oats
4-7 cups any combination of: raisins &/or dates

What you do: 

Cream bananas and vegan sugars. Add Ener-G Egg Replacer & water and beat thoroughly. Add in vanilla, salt, baking soda, flour, and oats, beating at medium speed after each addition. Stir in other ingredients. Press golf ball size scoops onto greased baking sheet 2 apart. Bake at 400 degrees F for 8-10 minutes or until brown. Cool completely before munching.

SO HOW'D IT GO?

I didn't have caster sugar, so I ground up some granulated sugar in my food processor.  These cookiesw looked great when they came out, but the taste was a little sweet, for my taste, and otherwise kind of bland.  I used raisins, so tyhat may be why my batch was so sweet.  Next time, I'll use less sugar and add some cinnamon and nutmeg to boost the flavor.  The consistency is very palatable, so I feel like with a couple small tweaks, these could be really amazing!
