Microwave Brownie for One

What you need: 

1/4 cup flour (I use white whole wheat)
1/4 cup sugar (brown is yummy)
pinch finely ground salt, optional
1/8 teaspoon baking powder
1-2 tablespoons cocoa, to taste
2 tablespoons liquid (water or nondairy milk)
1 tablespoon vegan margarine, melted
1 tablespoon toasted nuts, chopped, optional
1 tablespoon vegan chocolate chips/chunks, optional

What you do: 

1. Combine the dry ingredients in a cereal bowl with a spoon, making sure to break up any brown sugar lumps (if using brown sugar) and cocoa chunks.
2. Stir in the liquid ingredients, leaving a few chunks in the batter, but scraping the sides and bottom of the bowl so it is mostly smooth. Stir in any nuts/chocolate bits that you might like in your brownies.
3. Scrape the sides of the bowl with the back of your spoon and flatten out the top of your brownie. Pop it in the microwave, and set it for two to three minutes. Do not walk away!
Not only is watching the brownie cook nifty and fun, you know it's done when it looks dry in the middle and a toothpick stuck in the center comes out clean. If you walk away, you risk burning your chocolate-y delight! When it's done, let it cool for a minute, and dive in with a spoon!
I have a pretty powerful microwave, so I used "Power Level 7" to ensure even cooking. You might want to do the same for a strong microwave, or if you have a weak dorm room variety, just nuke it on high.

Sooooo good. I added a tablespoon of peanut butter. Perfect.

Truly amazing!! Done in 1 1/2 minutes in our microwave- serves 2 adults or 2 adults & one kid. Decedent enough to be able to share! Super good! Awesome that there's no leftovers to eat & get fat- just a one time treat & it's gone! Best brownie I've ever eaten. If I'm going to be sinful & have a brownie, I want this one!! But I'm SO FULL!! And my tongue is a little burnt since I ate the delicious thing piping hot. hehe. Couldn't stop myself. Didn't want to. Didn't try.

Using a brown sugar substitute (one w/ less calories & carbs), vanilla soymilk for the liquid, using 2 T cocoa & 1 T chocolate chips, no nuts, I calculated 273 calories, 9 grams fat, 40g carbs, 28g sugar, 4g fiber & 2.5g protein, for half the recipe.

That is definitely not a meal to be had often, but I am convinced now after all other attempts at brownies have failed for me, regular vegans ones & ones trying to be healthier, that for one- brownies can't taste like they should if I try to make them healthy! And 2- brownies don't taste like they should anyway. Always something wrong with them. Not this time! So, thank you. I'm in love. Even though my face is greasy. haha

The fact that they came together so quickly with such little mess is a HUGE bonus too. It was a pleasant little experience for me.

I day-dreamed about the next time I have a guest over I'll be like, "Would you like a brownie?" And they'll be all, "You have brownies?!" And I'll say nonchalantly, "No, but I'll make you one real quick." Superr cooool.

used coffee for the liquid... aaaaaaaaaaaaaaamaazing!!! and I am happy there is only one serving or I would eat til I bust! lol

OK, I'm changing my review because this CAN be awesome... with some adjustments.

#1 - Cut the recipe in half, this is way too much for one
#2 - Add an extra teaspoon of water, otherwise it was not wet enough to stir
#3 - Only put in for 1 minute! I ruined this 3 times trying the 2-3 minutes suggested.

I topped mine with vegan chocolate syrup. Yum!

the microwave time will vary. I have a 500 watt microwave, so mine takes longer :) and if anyone overseas wants to try this, most foreign microwaves are low watt too from what I understand.  I also have to use more water, because of the wheat flour I use,infact I like to use strong coffee/espresso  :)>>>

awesome! added dark chocolate chips & chopped walnuts...as is, the "batter" was a little bit dry so i added another splash of soymilk. used sugar in the raw (which might be why it was a bit dry at first) & earth balance...perfection! i really only tried this recipe out of curiosity because everyone on here raved about it - but once i tried it i couldn't stop myself! perfect, like an ooey gooey grown-up version of kids cuisine brownies :)

This is so good it's ruining my healthy eating!  :-D I add some raw cocoa nibs and goji berries  just to level things out a bit.. Double the recipe to share this chocolate heaven with your bf!..  :)>>>

Mmm! Yummy!
I made half of the recipe and whilst it was small, it was definitely enough! Very rich and decadent! I added half a tablespoon of shredded coconut and coconut extract, mmm. I think next time I'd add a bit more soymilk next time as it was a bit dry at just under a minute in the microwave.
Next time I make this I'm going to try replacing the margarine with applesauce or a mashed banana, as that's 90 extra calories I'll cut if I can! (And that's still the recipe halved...)
Anyway! Excellent recipe, takes about 5 minutes to whip up, and doesn't taste like microwave cake at all, marvellous, cheers!

If you re like me and don't have a microwave...this recipe is the perfect size for those super mini loaf pans, which are the perfect size for your friendly neighborhood toaster oven. Not as fast as in the microwave, definitely yummier, and definitely safer than making a full size batch!

Latest tweaks: cinnamon and ginger, a pinch each. A tablespoon of grated coconut instead of cocoa. A tablespoon of chunky peanutbutter hidden in the middle of the cake. A tablespoon of raisins mixed into the flour.

Deeelicious.
