Microwave Brownie for One

What you need: 

1/4 cup flour (I use white whole wheat)
1/4 cup sugar (brown is yummy)
pinch finely ground salt, optional
1/8 teaspoon baking powder
1-2 tablespoons cocoa, to taste
2 tablespoons liquid (water or nondairy milk)
1 tablespoon vegan margarine, melted
1 tablespoon toasted nuts, chopped, optional
1 tablespoon vegan chocolate chips/chunks, optional

What you do: 

1. Combine the dry ingredients in a cereal bowl with a spoon, making sure to break up any brown sugar lumps (if using brown sugar) and cocoa chunks.
2. Stir in the liquid ingredients, leaving a few chunks in the batter, but scraping the sides and bottom of the bowl so it is mostly smooth. Stir in any nuts/chocolate bits that you might like in your brownies.
3. Scrape the sides of the bowl with the back of your spoon and flatten out the top of your brownie. Pop it in the microwave, and set it for two to three minutes. Do not walk away!
Not only is watching the brownie cook nifty and fun, you know it's done when it looks dry in the middle and a toothpick stuck in the center comes out clean. If you walk away, you risk burning your chocolate-y delight! When it's done, let it cool for a minute, and dive in with a spoon!
I have a pretty powerful microwave, so I used "Power Level 7" to ensure even cooking. You might want to do the same for a strong microwave, or if you have a weak dorm room variety, just nuke it on high.

I gave this a try tonight as I was craving something chocolatly but wasn't in the mood to full out bake anything. It was amazing. I cut the recipe in half since some people said it was big and it had a lot of calories for just a late night snack for me.

I must say though, this was amazingly delicious! And fun to watch it bake. It took about a minute and a half for mine to be done.

I'm a vegan going off to college next week so this could seriously save my life. Plus there's portion control as its only one serving. :)

Awesomeness. I was skepically about the 1/4 cup of sugar to 1/4 cup of flour ratio so I used about 2 teaspoon short of the sugar. It turned out it wasn't sweet enough for my liking, but that's my own fault really. I'll stick to the recipe next time. I really like the texture of this one better than the other microwave brownie recipe on VW which ended up being too cakey for me. What a quick way to hit that chocolately craving spot!

"when it's done, let cool for a minute"  oops, i didn't read that line until i was scraping the bowl and licking the spoon  :P  yummy!

i cooked the first one for my husband for about 1 minute and 45 seconds. it was rather dry and not impressive. his response was 'eh'.

i then cooked mine ( ;)) for about  1 minute and 15 seconds. mmmmmmm, gooey goodness.

microwaves must really vary in power. i added a dash of cinnamon and a couple drops of vanilla. this was rich, chocolatey and very satisfying. thank you!

Apollonia - i've made it without baking powder before, it doesnt taste exactly the same, but still yummy! (but i think that was the time i forgot salt too.. haha

This recipe will be the death of me, i make it soooo much.

this is dangerous.  I have had my eye on the recipe for a while now and for some reason decided tonight was the night.
Nom nom nom.  Perfect amount for one person (quite a large brownie, but I'm a pig!).  I cooked it in a mini tupperware-type container and it took just under 2 mins.  It came out kind of gooey and really soft.  Not sure how it would be if it was kept for any length of time, but let's face it this recipe is one of those quick fix types.

In terms of a brownie in general it was definitely very good IMHO and for the fact that it can be whipped up from start to finish within 5mins it is excellent.

I added some chocolate chunks and only used 1/2 tbs of cocoa powder and 4 tbs plain soy milk. It reminds me of those brownies you used to get in the kid cuisines lol. Def good for having a brownie without all the work of making a batch. Yum.
