Microwave Brownie for One

What you need: 

1/4 cup flour (I use white whole wheat)
1/4 cup sugar (brown is yummy)
pinch finely ground salt, optional
1/8 teaspoon baking powder
1-2 tablespoons cocoa, to taste
2 tablespoons liquid (water or nondairy milk)
1 tablespoon vegan margarine, melted
1 tablespoon toasted nuts, chopped, optional
1 tablespoon vegan chocolate chips/chunks, optional

What you do: 

1. Combine the dry ingredients in a cereal bowl with a spoon, making sure to break up any brown sugar lumps (if using brown sugar) and cocoa chunks.
2. Stir in the liquid ingredients, leaving a few chunks in the batter, but scraping the sides and bottom of the bowl so it is mostly smooth. Stir in any nuts/chocolate bits that you might like in your brownies.
3. Scrape the sides of the bowl with the back of your spoon and flatten out the top of your brownie. Pop it in the microwave, and set it for two to three minutes. Do not walk away!
Not only is watching the brownie cook nifty and fun, you know it's done when it looks dry in the middle and a toothpick stuck in the center comes out clean. If you walk away, you risk burning your chocolate-y delight! When it's done, let it cool for a minute, and dive in with a spoon!
I have a pretty powerful microwave, so I used "Power Level 7" to ensure even cooking. You might want to do the same for a strong microwave, or if you have a weak dorm room variety, just nuke it on high.

Wow didn't know this was possible. Totally awesome because I can make a brownie anytime but don't have to worry about "accidentally" eating the whole batch!

Oh dear me....this college girl is going to end up eating this MUCH too often. Yum. I didn't have any non-dairy milk, chocolate chips, or nuts, so I just made it plain with water. Seriously, this is soooo good. I can't get over it. I made this yesterday, and at the moment I'm waiting for my roommates to leave the kitchen so they can't see me make a batch of this/ask me for some. :) Thank you for making my pants just ever so tighter!

Sooooo good! I didn't have vegan margarine so just used half a tbs of veg oil with half a tbs of water

First I tried this using stevia instead of sugar and I wasn't fond of it. So I re-tried it cutting the batch in half, and used regular turbinado... MM!

I made a SINFUL tasting topping using some cocoa, some Tofutti cream cheese, and some maple syrup to sweeten it up.

SO GOOD. btw if you're trying to watch your waistline, brownies are probably not something that you should be going to as a "low cal" snack haaha

yea i know , its just that i was craving something  sweet  at the time  and   i ran out of apples  and melon  and i was kind of desperate.
and i didn't  have any money on me ,  i now know never to bake  when  i have a craving. :P
your version  sounds  nice  by  the  way.  unfortunately the  tofutti brand  is hard to come by in the uk .

hehe my waistline comment was more directed towards those who talked about how fattening it was--of course it is! it's brownies! :)

they're really good though, can't wait to try them with some choco chips when I have some

can someone  please tell me How  Many Calories You Think i just  ate Please, im a bit  worried  ! !! i ate thinking it wasn't much  otherwise i wouldn't have  made  it  or ate it. :( ???

For the recipe with milk alternative and no chocolate chips or nuts:
Calories 449     Calories from Fat 125    Total Fat 13.8g
For the full version:
Calories 556     Calories from Fat 191    Total Fat 21.2g       Saturated Fat 5.9g

Of course this varies, but it's a rough estimate. I calculated it on calorie-count.com

that's really bad!  i thought it  would be less then 300 at least, that must be wrong , im going to change  to a lower calorie  flour or something ,  and substitute sugar  for  0cal sweetener.i'm shocked , how can anything be that many calories :/ must be the  flour. i guess  in all the  recipe  is not worth doing  unless  you find  a healthier  way  of  doing it  by substituting  everything  for something  healthier?
if  anyone's  got any ideas  for making this recipe  healthier calorie wise,  maybe you should put up a new  recipe  for it ,  call it ''the healthier option brownie''  or  something , if thats even possible, haha. ???

This was delicious! I used power setting 7 like you said, and popped it in for 2 minutes, and it was delicious! It was a lot so I shared it with my mom (who's not a vegetarian) and she loved it!! Thanks so much for the recipe!
