General Tao's Tofu

What you need: 

1 (12 ounce) box firm tofu, in 1" cubes (frozen and thawed, if desired)
1 egg equivalent (e.g., EnerG Egg Replacer), prepared
3 tablespoons + 2 tablespoons water, divided
3/4 cup + 1 tablespoon cornstarch, divided
vegetable oil for frying + 3 tablespoons vegetable oil, divided
3 green onions, chopped
1 tablespoon minced ginger
1 tablespoon minced garlic
2/3 cup vegetable stock
1/4 cup granulated sugar
2 tablespoons soy sauce
1 tablespoon white vinegar
1 tablespoon sherry, optional
red pepper, to taste
steamed broccoli, to serve

What you do: 

1. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl.
2. Heat oil in pan and fry tofu pieces until golden. Drain oil. Heat 3 tablespoons vegetable oil in pan on medium heat. Add green onions, ginger, and garlic; cook for about 2 minutes. Be careful not to burn garlic.
3. Add vegetable stock, sugar, soy sauce, vinegar, sherry, and red pepper.
4. Mix 2 tablespoons water with 1 tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.
Serve immediately with steamed broccoli over your choice of rice.

SO HOW'D IT GO?

I made this for the first time and it turned out great. I didn't have veggie broth so I subbed some teriyaki sauce and water. I doubled the recipe's sauce but still could have used more, however I did make a ton of tofu! I will definitely make this again ;)

I really enjoyed this recipe. It sure is filling.

I like it's simplicity and with all the broccoli it has some good health value. I doubled the sauce and didn't add quite as much sugar as it called for, but it was still very sweet. Next time I will tone down the sweetness alot more, and perhaps use rice vinegar next time instead of regular white vinegar. I also added red pepper flakes, and that gave it a little spicyness, I think which made it better.

This is a tasty dish, but I didn't realize until I started to make the sauce.. this is sweet and sour sauce. It let me down a little because sweet and sour sauce is such an easy sauce to make, and I wanted something different. But It doesn't taste like hawaiian sweet and sour sauce which is good, it has a very oriental flavor.

I didn't let the tofu dry out all the way, patly because the gallon water container I was using the as a weight fell over and burst all over the kitchen floor. I'm glad it didn't because when I think If I had tried to fry it dried out , it would have been way too dry. As it turned out the tofu was crunchy on the outside and still mostly moist on the inside. I chopped the tofu much smaller than it said, about 1/4 of an inch, but it was still easy to coat and there was more to spread around on the rice. One thing, is that it takes a long time for the tofu to fry.

Nice recipe, next time I'll try more soy sauce and maybe perhaps some hoisin souce.

I used agave instead of sugar, and have even made it adding some blood orange juice for taste and color.  yum.

How did it come out with the agave? How much would one use to replace the sugar? My kids love agave and I am trying to cut back their sugar intake.

Very good indeed ! My family is all omnivore and we tried this recipe and my younger teen sis and bro thought it was chicken ! We made sure they finished it before we told them it was tofu now they're hooked !

well, i tried this last night. i thought it was good, but not great. i hate to hurt anyones feelings by saying that, but...i used teryaki sauce in place of the soy sauce and sugar, and i reduced it. i doubled the sauce recipe as well. i bake the tofu instead of frying, cause i have a fear of frying..ha. i used fresh broccoli, carrots, and mushrooms as well, and i served it with brown rice. overall, it was good, but i was expecting something more....i think the sauce needed something. i think perhaps i was expecting more, cause if all the great reviews it had. so, i shall make it again, perhaps.

Well Teriyaki sauce doesn't taste anything like soy sauce.. and frying the tofu with the breading is what tastes so good. The sauce probably needed soy sauce and sugar, like it calls for.

You should try it again following the recipe.  :) I am sure you'd like it.

I have been making this recipe a lot. Wonderful! Double the sauce, double the breading, for sure.

My husband and I just tried this recipe and were surprised just how good it was. We doubled the sauce, as suggested, but were still a little short of sauce. The taste was just like takeout (American style).  We'll definitely be making this one again. My husband raved about it, too.

Made this last night and it was awesome! Well done recipe, easy to follow. I added baby bok choy, doubling the sauce as previously mentioned. Yum, it's wonderful.

I can see why this has ten pages worth of comments!  ;D
