Double Chocolate Oatmeal Banana Cookies

What you need: 

1 cup flour
1 1/4 cups oats
1 teaspoon salt
1/2 teaspoon baking soda
2/3 cups brown sugar
2/3 cups white sugar
1/2 cup cocoa powder
1 banana
1 tablespoon vanilla
3/4 cup vegetable oil
3/4 cup chocolate chips

What you do: 

1. Preheat oven to 350 degrees F. In a big bowl, mix all the dry ingredients (except the chocolate chips).
2. In a small bowl, mash the banana and mix in the vanilla. Add the banana mixture and the oil to the dry ingredients.
3. Mix until it is doughy, then fold in the chocolate chips (add more to your taste). Form 1 inch balls and place them on the cookie tray (they flatten out pretty big, so leave plenty of room). Bake for 8-10 minutes, let cool.
Eat!

These cookies were great! I made them with some friends who had never baked anything vegan before, and they were totally stunned at the results. One thing I found difficult, though, is telling when the cookies are done. Since they are so dark with cocoa powder anyway, I can't see any browning, which is usually how I tell. Any tips for that?

Well, the dough is full of oats, chocolate, and bananas, so you know they're going to be delicious no matter what else goes wrong...  But I was a little disappointed with the consistency at the end.  I should've heeded everyone's advice and cut back on the oil, because 3/4 turned out to be way too much.  After the first cookie sheet's worth was done, I tossed two more handfuls of flour into the remaining dough so they would be a little firmer.  Also, maybe I ought to check and see if my oven is actually getting up to temp, but these took at least fifteen minutes to bake, not 8-10.  I pulled them out once or twice the first go-around thinking they were done, but they weren't.

All in all this is a good recipe.  I'm sure I'll make it again because, as I said, even though it didn't go as smoothly as I'd hoped, they're SO delicious.

I'm gonna go eat another one now because once the boyfriend gets home and gets a whiff of the kitchen, who knows if I'll get another chance?!

these were great...

if you add another banana and reduce the sugars by 1/4 cup each.... and reduce the oil to 1/2 cup... and pour the batter in a regular baking tray...

they are PHENOMINAL brownies.

just sayin'

:D i have made these at least a dozen times over the last 2 months, i can't get enough of them! these were the first cookies i made as a vegan and no cookie has been as good since!

suggestion! substitute the veg oil for peanut oil...gives a peanutty taste that you will NEVER go back from. :)

Okay - so I have been  making vegan cookies for months now, trying a different recipe every time in hopes to one day come across the PERFECT vegan cookie - and THIS WAS IT!!!!!!!! thank you!!!!!
Of course, I changed it a little. As in, I only used 1/4 c. white and 1/4 brown sugar... cause if cookies are too sweet, I eat too many :) I also used 1/4 c. oil and 1/4 c. applesauce instead too. I also didn't have cocoa powder. But regardless, this recipe saved me from painstakingly trying and miserabley failing at more and more feeble attempts at merely half-good cookies.

AMAZING! I must say the batter alone was so yummy Im surprised I managed to bake any. Since other users had said the recipe was oily I used 1/4 cup oil and 1/4 cup applesauce and they were quite moist. I also only had barley flour and I threw in 1 tsp of cinnamon. I'm going to cut down on the white sugar next time because they were a bit sweet for my taste but not so sweet that its stopped me from eating several. Thank you!!

these cookies are pretty good.  the banana flavor was much stronger than i expected, but they also live up to the 'double chocolate' title, which was what i was hoping for. hubby liked 'em too! ;)b
