Crumbly Coconut Cookies

What you need: 

1/2 cup whole wheat pastry flour
1/2 cup oat flour*
1/3 cup shredded coconut
4 tablespoon brown sugar**
2 teaspoon baking powder
pinch salt
2 tablespoon vegetable oil
1/4 cup water

What you do: 

Preheat oven to 375F.
Mix dry ingredients except sugar in a bowl. Mix liquid ingredients plus sugar in another bowl, stir until sugar dissolves. Add liquid ingredients to dry ingredients, just until dough holds together and is workable. (you might use less than all liquid, or have to add a bit more water).
Roll dough out to 1/4 inch thickness (dust it lightly with flour so it doesn't stick to rolling pin). You can also just press the ball flat with your hand.
Cut into cookies.
Place on baking sheet. Bake for 12-14 minutes. Let cool. Enjoy & start again!
You can make many more kinds of cookies with this recipe, including salty ones. Experiment with flavors, herbs, etc.
Notes: * you can also make your own oat flour by grinding rolled oats in a food processor or blender to cornmeal consistency.
** if substituting liquid sweetener, adjust dry/liquid ratio accordingly

SO HOW'D IT GO?

Ok I didn't follow the recipe as written but I had  cookies that were declared amazing by friends...I  loved it!

1. instead of 1/4 water....1/4 maple syrup
2. soy butter instead of oil ( had no oil left)
3. handful of raisins and chopped up pecans
4. coarsley chopped persimmon

Already made 2X now.....yum

i just love how these cookies weren't greasy at all. they felt light and crunchy not to mention deelish!
i spread some raspberry jam between them for more festive look.

cons:
- the dough was hard to work with. rolling surface has to be heavy dusted with flour.

Not sweet enough for me, next time I'll add 1/4 cup maple syrup instead of water. But these were okay because I had put some choc chips in them and some pb on top after they cooled.
