Chickpea Salad in Lettuce Cups

What you need: 

1 (15-ounce) can chickpeas, drained and rinsed
1/2 red onion, finely chopped
1 small tomato, deseeded and finely chopped
2 tablespoons minced cilantro
1 tablespoon lemon juice
1/2 teaspoon cayenne pepper
1/2 teaspoon curry powder (optional)
salt, to taste
black pepper, to taste
10 to 12 large tender butter lettuce leaves, rinsed and patted dry

What you do: 

1. Except for lettuce, combine all ingredients in a bowl (chickpeas, onion, tomato, cilantro, lemon juice, cayenne pepper, curry powder, salt, and pepper).
2. Place about 1 to 2 tablespoons of the chickpea mixture into the lettuce cups, depending on the size of the leaves.
Fold up the cups and eat!

SO HOW'D IT GO?

Sorry, can't say I loved this flavour combo... it's pretty intense and needs sweetening up somehow.  I think if would remake this without the lemon juice and just add a nice salad dressing.  I'm sure some would love it tho.
