Cherry Pie

What you need: 

4 cup cherries
3 tablespoons tapioca, dry
1 1/2 cup sugar or equivalent
1/4 teaspoon almond extract
9 inch vegan pie crust

What you do: 

Mix cherries, tapioca, sugar, and almond extract. Let stand 15 minutes.
Pour into crust and bake at 400 degrees for 45-50 minutes.
If you're making the pie with frozen fruit, thaw the fruit and drain off extra water before use.
