Revolution Kumquat Pie

What you need: 

16 oz (2 containers) vegan cream cheese (I prefer the Tofutti brand)
1 cup evaporated cane juice sugar
1 teaspoon vanilla
2 tablespoons cornstarch
1 pint of whole kumquats (skin and all), seeded
lemon juice, optional, to taste
Vegan frozen crust

What you do: 

Preheat oven to 375 degrees Fahrenheit.
Blend all ingredients until smooth. Pour mixture into crust.
Bake for 45 minutes. Let cool, cover, and refrigerate.

SO HOW'D IT GO?

;)b  Someone gave me some kumquats and I had no idea what to do with them.  That is until I found this recipe.  This pie turned out fantastic, kinda like a cheesecake, and I will definitely make it again (when someone else gives me some kumquats!).  The only thing I did different was when the pie was cool I arranged some canned tangerines around the top.  Thanks for the recipe!
