Chocolate Pudding Ingredients (use vegan versions): 2 tablespoon cornstarch
1 ½ tablespoon sugar
1 TB cocoa powder
1 cup soy or rice milk (I use powdered soy milk for this and for baking because it is cheaper and I always have it)
1 of the following vanilla extract, almond extract, peanut butter, chopped candied ginger, some of the syrup for flavoring coffee or some such yummy addition
Directions:Combine the first three ingredients in a sauce pan, add the milk whisk well, heat over medium heat stirring often to prevent clumping. When the pudding has thickened (about four minutes) remove from heat and add your add in. If it is plain chocolate it is a bit dull but when you add a flavor it is really fantastic! Great warm but can also be eaten cold.

You can usually find powdered soymilk at a bulk store...such as the Bulk Barn, or even health food stores carry it sometimes.

Thank you so much for this great recipe! One of the foods that my husband has missed the most (since we went vegan) has been chocolate pudding-- we have tried various other recipes, but this one is the best!! He is so happy with his new pudding, and that makes me even happier! We added vanilla, peanut butter, and a pinch of sea salt to ours (much like what you suggested), but one thing I did to make it even easier was I used Chocolate Silk Soy milk, and omitted the cocoa powder. It turned out really beautiful! Thanks again!

Would Carob powder work to replace the cocoa? If so, how much and should the sugar be reduced?

Some supermarkets carry a product called Better Than Milk, which is labeled a dairy-free tofu beverage mix. Its great as a coffee whitener, for smoothies, etc., I guess anything you would use powdered milk for. Carob replaces cocoa powder in equal amounts. And for Acacia, this website has a couple of great pudding recipes that are even easier coz they use tofu rather than soy milk so they don't have to be cooked!

If you use powdered soymilk, there would be no liquid. What am I missing?

i thought the consistency was great... but it was a bit flavour-less. i made it with a tablespoon of peanut butter and some vanilla.... perhaps ill try putting more next time.
