Coconut Whipped ToppingIngredients (use vegan versions): 13.5 oz can coconut milk
1/2 package silken tofu, extra firm
2 1/2 tablespoon turbinado sugar
1 teaspoon vanilla
3 dashes salt
2 teaspoon instant Clear Jel (regular Clear Gel is a modified 807]
cornstarch[/url] made to
withstand the heat of canning.)
Directions:Blend first 5 ingredients in blender until smooth. Then, while still blending, sprinkle in Clear Jel. Chill to thicken. Stir briefly before serving.
This is excellent as whipped cream replacement such as on desserts, or to mix in non-cooked recipes calling for whipped cream, such as Cranberry Salad.
