Hi everyone - cooking slump

Hi, I'm new to VegWeb.  I've been vegetarian for almost a year now; I did it for ethical and health reasons.  I have loved everything about how it has made me feel, and I've found it has made me a much better marathoner.

Only problem: I'm in a serious cooking slump.  I absolutely loved cooking before, and now I don't.  It's not that I don't like the food, but somehow it's not as fun to plan meals and cook anymore. I've cut out most cheese and dairy because it's not very appealing to me now.  Anyone been through a similar thing?  Maybe I just need to learn more about veg cooking.  Suggestions?  Cookbooks?  Even just a fantastic couple of recipes?

Have you tried Indian cooking? Personally, I love it. The flavor combinations are amazing and easy to veganize... if the recipe wasn't vegan to begin with!

I really love this cook book, but there are tons of others out there.

I was the exact opposite - I didn't start to love cooking until I went vegan....and now I can't stop!  I'm a total foodie!

My advice, though, would be to start with a handful of recipes from this site.  I didn't start with cookbooks until recently, but I still prefer recipes with reviews - that way you kinda know what you're getting into - and most people on this site tend to give amazing advice.

hello hello!

veg enchiladas are the bomb and good for winter time seeing how they're super filling, hot and tasty.

here's my recipe:

whole wheat tortilla
1 large can or 2 small cans of red or green enchilada sauce
2 bell peppers green/red or whatever colors you like
1 small yellow squash
1 small zucchini
1 onion
garlic paste or chopped garlic to taste ( I use alot)
refried black beans or pinto bean
your favorite chili pepper (i use small green chili or jalapenos) be careful with these because the add alot of heat

spray or coat a glass baking dish with your fav oil and add 1/4 cup of enchilada sauce to dish as well

halve the veggies lengthwise then julienne them so that you have thin strips of the squash,peppers, zucc, and onions.

2 tbls of oil to large skillet, saute onions until soft then add garlic. cooking until translucent. 

add peppers, squash and zucchini, cook until soft.

add chopped chili's or jalapenos 

add beans and mix all together until ingredients are incorprated, turn of heat.

take tortilla and stuff with bean and veggie mix, add tbls of enchilada sauce and vegan cheese if desired roll up and continues until dish is full. cover with enchilada sauce and bake in a 425 degree oven for 25 to 30 minutes.

serve with vegan sour cream and spanish rice.

I have made lots of variations of this recipe, I love adding the rice into the enchilada before baking, i've put in broccoli, a can of kidney beans even green beans which was surprisingly good, its a very flexible recipe and one that I make at least once a month.. YUM YUM!

Welcome to VegWeb...........I'm a cookbook user and love vegan cooking.  But sometimes I do get into a slump where I'm just tired of it all.

There are many great cookbooks...check out out cookbook forum.  Veganomicon is awesome and is Vegan with a Vengence.  Books like "How It All Vegan", "Vegan Fire & Spice", "The Tropical Vegan Kitchen" etc. are also good.  Go for ethnic and variety.  There are also Indian and Asian vegan cookbooks out there.

Good luck and hang in there.  If you're like me, this too shall pass.

Hi!  I am new too and had a similar problem... I used to love to cook but then quickly got into a rut when my old recipes no longer appealed.  I looked at many cookbooks (you'll find great reviews in the cookbook section here) to find ones that fit my preferences:  easy, vegan, and light on refined flour, sugar, and soy products.  Finding "1,000 Vegan Recipes" was thrill for that reason; it uses just what I want to eat and gives 1,000 ways to do it.

Last night I made an Asian slaw, Hot & Sour soup, Scallion pancakes, and Coconut Nice Cream.  Had everything on hand except for slaw mix, bamboo shoots and arrowroot.  A quick run to the grocer and I was set.  Did not take long and tasted great!

I suppose I'll go put a review in the cookbook section....

I agree with making recipes on vegweb... They tend to be way easy and you know what the finished product looks like (usually)

I also agree with Tweety about Veganomicion and Vegan with a Vengeance... I went on a rampage and bought tons of vegan cookbooks off amazon/ ebay and these are the only 2 cookbooks I have really used

If you need any recipe suggestions that suit your tastes/ cravings let us know!

I didn't love cooking until I went vegan.  Do you ever pick something you have never tried and plan a meal around it?  Before I went vegan, I had never cooked bok choy, turnip greens, red lentils (lots of others, but those come to mind), so I would try lots of recipes with those things.  Also I started trying all types of ethnic foods.

Vegan Table (Colleen Patrick Goudreau) is my favorite cookbook. I've probably made a third of the recipes in there, and that's a pretty good amount, for me! I have Vegan with a Vengeance, but we don't click as well as Vegan Table and I do.

But my favorite resource is vegweb!!

Thanks so much, everyone, for all the suggestions!  Indian cooking is a great idea.  I love Indian food and I cook from Indian recipes occasionally, but I never really thought of getting an entire book about it.

I just got Veganomicon, and I've heard good things about Vegan Fire and Spice.  I've already discovered 1000 Vegan Recipes, and just recently I interviewed the author, Robin Robertson, on my blog.  That book has definitely been my favorite vegetarian/vegan one to date.  I like Vegetarian Suppers from Deborah Madison's Table, too, but some of those recipes are a lot of work.

Sounds like the first step is just exploring VegWeb and trying out some recipes.  Great to meet you all; I'm so glad I found this site!

Veg enchiladas are on my list this week!
