What to do with cooked Amaranth?
I have a question: I never cooked with Amaranth before but yesterday just took a leap of faith and cooked 1 cup w/2 c water in the rice cooker (I do that with Quinoa and it always comes out perfect!). Now I have a brown mushy grainy mix and don't really know what to do with it! It's quite sticky and smells very earthy, is that normal?
Any good recipes you'd like to share? I'd appreciate your input! ^_^ TIA!
