What to do with 2 pounds of fruit?

Hi all!

My friend at work wanted to thank me for helping her so she presented me with a pound of fresh blueberries and a pound of fresh strawberries.  Now, I typically do not buy fruit, especially not expensive out of season greenhouse grown fruit so I am stumped.  What should I do with this bounty?  I flipped through the Joy of Vegan Baking and V'con but so far nothing grabs me.  It all seems so off season.  Blueberry cobbler sounds nice (JoVB pg 136) though so does Blueberry Orange Bunt Cake (JoVB pg 82) but I cant make up my mind.  It supposed to be cold as all get out for the next 9 days so baking sounds good but the results of summeresque desserts seems odd.  And strawberries?!  I am more than happy to freeze it all for smoothies but darn it seems kind of like an insult to the fresh fruit.

Help!

Fruit leather?

Dare I say I can eat nearly a pound of strawberries at a sitting??  :-[ (Mind, our strawberries aren't as acid as American ones. Much larger and sweeter.)

Here's something fun to do with berries. Get a bottle of good sangria and some dairy-free sherbet of a compatible flavour (raspberry is nice if you can get it.) Place some of the fresh fruit in the bottom of a tall glass, add 2-3 scoops of sherbet and top up with cold sangria. Serve with straws and spoons.

I have always used Yago brand sangria for this with good results.

Put the blueberries in muffins, waffles, pancakes...on your cereal...eat them as is...
Such richness! And off-season--what a kind gift!

LUCKY!

with that amount of fruit, you could make so many different things...that way, if one recipe doesn't turn out very well, you won't have wasted the whole bounty.

I'd definitely throw some of it in a blender (possibly with other fruits) and make smoothie-like stuff.  You can drink as is, or make little fruity popsicles!  pour it into molds (or even an ice cube tray) with a spoon or toothpick stuck in for a handle.

and yes, I would also suggest muffins or breads....you could make some to give to your friend as a return thank-you!

Carrot Wench you have such a brilliant idea!  Regifting the fruit as a completed dessert! Brilliant.

I cant decide which recipe to make for the strawberries.  I would love to do something shortcake ish but am stuck on Lemon Cheesecake with strawberries as garnish or the V'Con Vanilla Pound Cake with a lovely strawberry slurry over it.  Decision decisions.

Fruit leather sounds nice but these are so yummy and fresh.  I keep wanting to preserve them in a dessert without completely making them indistinguishable from frozen.

Now the drink sounds fabulous.  I need to go find some awesome sorbet!  hahah  Unfortunately my freezer is too full to make my own.

If it tastes good, eat it raw.  If it tastes too greenhouse or underripe, bake it.

If I had it, it'd be:

1 pound blueberries + 1 bowl + 1 can soy whipped cream + 1 soup spoon = delicious

i would freeze some, for sure...b/c if they are out of season anyway, they prob arent the tastiest anyway. but i think berries retain their taste and integrity well.
if you make jam, you could give your friend a jar also.
