What did you cook / Eat today? .....A question to drool

We can share in this place, our daily intake of what we cooked and ate.This can be Breakfast, Lunch or Dinner.
This can be a real fun thread if people post the photographs too.

Today I prepared Fawa beans-Potato spicy curry and Rotis (Indian breads are my wife's department)
Ate with leftover rice and Moong beans spicy curry and Naga chutney. :)>>>

What is this said recipe? A millet patty, of sorts, I assume...

The doomed recipe in question, like most of the things I cook these days, was taken from the book "Vegan Cooking for One". A millet patty indeed!

I've seen "Vegan Cooking for One" at the library... maybe I'll check it out  ;)b I only do cooking for one... so it makes sense, I guess.

I'm originally from Kitchener, but in London for university (Western). Not the friendliest place for a vegan like me, but it works fine. I'll probably end up in Toronto for grad school though.

Breakfast/ Lunch: Three peanut butter cups, since I didn't manage to eat them all yesterday evening.

I think for supper I well go get something stuffed with veggies because I could really use something healthy, also my kitchen is such a mess and I don't feel like cooking.  ::)

That "Vegan Cooking for One" cookbook sounds interesting. Even though I already have "Vegan Bites: Recipes for Singles."

Me too! I love getting the day started of with something savory or spicy or something like that... Much better than traditional breakfast foods, IMO.

Are you on about the Leah Lenemen book?  I bought this when I first went vegan and think it's really good - Laura I would definitely recommend getting it out of the library.

Hmmm, must dig it out of my pile - I've not even looked at it in about 2 years!

Salad: Mixed greens, baby spinach, zucchini, sprouts, grated carrots w/ balsamic vinagrette

Cheaters chili con "carne": Can of Amy's Kitchen spicy chili heated up and mixed with vegan sour cream. And of course some tortilla chips. Yum yum.

Peanut butter cups for dessert.

Heh, heh. Just barely. I ate three for breakfast/lunch and two for dessert. So no more left to share.  :P
Although, I certainly feel that I'm done with chocolate for a good while.

Breakfast: smoothie made with frozen berries (strawberries, raspberries, blackberries, blueberries), banana, handful of grapes, handful of spinach, hemp seed, flax seed, and chia seed + 1/2 of a sprouted grain English muffin with peanut butter, blackstrap molasses, and nutritional yeast sprinkled on top

Snack: Fuyu persimmon and about 1/2 cup of homemade tofu chocolate-orange pudding

Lunch: big salad with red leaf lettuce and spinach, broccoli sprouts, cucumber, carrots, raisins, and a sesame-orange-ginger dressing + very small plate of whole wheat spaghetti, homemade marinara, and "parmesan" (nutritional yeast, ground almonds, and salt) sprinkled on top.

Snack: apple with a few slices of Sheese that I brought back from Portland

Dinner: Cabbage and potatoes in a mustard sauce (recipe in Short Cut Vegetarian by Lorna Sass) with kidney beans

Breakfast: Sweet Cinnamon Spice tea with agave. Carrot Sticks

Lunch: Loaded veggie sandwich from Earthfare. Veganaise, tomato, avocado, sprouts, carrots, mustard, lettuce. Sea Salt and pepper kettle chips.

Dinner: Hopefully making easy peasy pizza with the Ian's pizza kit.

B: Breakfast potatoes and toast
L/D: Cheezy bean enchiladas with guacamole salad

That looks like so little..but oh, I slaved and gobbled! I cooked beans and made enchilada and cheeze sauce.

I think I want bland, steamed kale for later..

Change of plans.

Snack: Queso dip, made from left over cheeze sauce, tofutti sour cream, and salsa. (Not a healthy snack)

Dinner: Just a small bite since I ate so much queso before. Whole Wheat noodles tossed in a little EB with a dash of Parm. Thought about adding tomato sauce instead, but I'm not sure mine is still good.

Breakfast was Hummus Wrap with Romaine,Carrots,Hot Banana Peppers and Santa Fe Style Salsa.
Lunch was rice noodles with shredded carrots,TVP and green beans lightly seasoned with a Asian type broth.
Late afternoon I had some leftover Indian Food.Mashed Eggplant mmm delicious.

Dinner I made stuffed peppers to freeze so I had some brown rice mixed with collards,TVP, shredded carrots,garlic a little curry and marinara sauce left over.
Zippy had the same for dinner.

If for some reason I happen to get hungry a little later I might have a small salad.
More Carrots of course.
Ran out of fruit so I have to get some tomorrow.
I think I might have a problem and be addicted to carrots since I notice I eat allot of them. ;D

I made applesauce with my giant farmer's market haul the other day, and I had a jar of homemade grape jelly that I haven't inhaled yet, so I blended 'em together and now I'm making apple-grape fruit leather! Yeeee! It should be ready just about the time I wake up tomorrow morning.

And I'm eating K@vli Crispy Pesto flavor crispbread crackers-- these things are INSANELY GOOD. Yumbles.

Last night dinner was Idly, sambar and coconut chutney.
I also had leftover plain rice along with samabr and NJ chutney pickle. :)>>>

For the past 4 days I've had nothing but boxed, frozen food and takeout.  My kitchen is being re-tiled and the cabinet and sink replaced so my oven and refrigerator are in my living room.  The ex-BF, who is trying to weasel his way back in the door, brought me a vegan pizza from ABC Pizza last night, but it didn't have any freakin' hot peppers!  How do you eat pizza without hot peppers?  I had to raid my brother's Black Dragon to add a little heat...all the pods on mine are green.  It's been a miserable few days food-wise.

I don't think it's possible.  I'm glad you said 'ex' or I would have encouraged you to dump him.  I take my spicy food seriously.
