What did you cook / Eat today? .....A question to drool

We can share in this place, our daily intake of what we cooked and ate.This can be Breakfast, Lunch or Dinner.
This can be a real fun thread if people post the photographs too.

Today I prepared Fawa beans-Potato spicy curry and Rotis (Indian breads are my wife's department)
Ate with leftover rice and Moong beans spicy curry and Naga chutney. :)>>>

Last night I put some rolled oats in a bowl to soak overnight for breakfast this morning. There was some leftover coffee (extra strong brew) in the pot, so I dumped a bit of that in with some water, along with a hefty tablespoon of flax seed.
This morning I mixed in about two teaspoons of cocoa powder, a little vanilla, and some agave nectar....

ta-da! Nutritious mocha fudge oatmeal for breakfast!

I was scrambling to get lunch together this morning, so I just threw homemade tomato sauce, homemade pesto, fresh spinach, and sliced cremini mushrooms in a big tupperw@re together, which I cooked here at work. Not too shabby!

For breakfast I had a big bowl of cauliflower/butter bean soup and a slice of homemade seitan. Soooo tasty. I'm glad I'm cooking again. :D

I made oatmeal this morning (the usual), then chocolate zucchini bread (will post about it!), zucchini and potato hashbrowns (didn't turn out too well), tomato soup (always good), and I'm going to make a grilled cheeze to go with the soup!

For lunch I had a spinach salad with some amazing lentils I made yesterday and a tiny apple that I cut into tiny pieces.  It was yum!

breakfast - pumpkin oatmeal (rolled oats cooked in vanilla soy milk with pumpkin puree, maple syrup, fall spices and dried cranberries) cup of coffee, a glass of orange juice, and a banana spread with crunchy peanut butter
snack - honey crisp apple and a peanut butter cookie larabar
lunch -toasted multi grain bagel sandwich with roasted red pepper hummus and spinach artichoke hummus, tofurkey slices, lettuce, tomato, pink onion. a garlic dill pickle, another honeycrisp apple and a can of apple cider spritzer
snack - annie's bunny grahams dipped in pb&co dark chocolate dreams peanut butter and a mug of warm chocolate soy milk (im eating my snack as i'm typing, its really yummy!)
dinner - grilled ''tuna'' melt (chickpea salad: veganaise, chickpeas, onion, celery, dill, capers, salt and pepper) on sourdough, tomato, lettuce, and a tofutti cheese slice. also leftover brussel sprouts from the farmers market, steamed, with annie's woodstock dressing. (very strange, but enjoyable!)

snack - honey crisp apple and a peanut butter cookie larabar

Mmmm!  This is the first year I've ever had a honey crisp, and they are so freaking good!  I will be very sad when their season is over.

Breakfast:  cup of tea (Yogi Egyptian Licorice Mint), 2 pieces of toast with margarine and blackberry jam (I usually have oatmeal, but was too lazy to make it.  My stomach was not happy with me come 10am...need more food!)

Snack:  banana, graham crackers left over from camping, some peppermint candies that I'm addicted to at work, mint tea

Lunch:  Homemade seitan sandwich w/ BBQ sauce.  Mmmm  :)>>>

Snack 2:  homemade applesauce (made from honey crisp apples), a banana, a Sweet and Sarah marshmallow, and a pickle

Dinner:  maybe a soup of some sort?  Not sure what we're gonna have...

Just finished making Spicy Fenugreek leaves Parathas (Fenugreek leaves and spiced Indian flat bread).
I am going to have it with pickles.Especially with Chhundo (sweet mango relish). :)>>>

I had oat cereal for breakfast.

Lunch is some crockpot white beans I made w/ onion, garlic, tomato, carrot, celery, fresh thyme and bay leaves.

Right now my Outrageously Big Bread is rising. I plan to use it to soak up my beans for dinner tonight with some steamed greens.

i made fresh apple juice this morning with a big slice of fresh ginger. so good.

I've got Brooke's Pumpkin Gingerbread working in the oven (thank you for posting! it looks and smells amaaaazing), but for dinner I'm going to have something easy, since I'm going to put up about 15 pounds of tomatoes tonight. (Finally bought the jars and everything! Wish me luck, that I don't give myself botulism...) I've got a double batch of BCG's tofu feta in the fridge, so I'm thinking something a Greek salad or something. Oh oh wait, I've got cukes as well and good bread! I think vegan fattoush may be in my future...

kbuettne - i agree, honey crisp is the best apple! i too, wish the season was longer. this week they are on sale at supertarget for $1.77 lb which i think is incredible! at the beginning of the season, we were paying $3.99 lb. so we then started buying them locally by the bag.

Whoa, I feel incredible spoiled all of a sudden-- I got my apples at $1.39 per pound at the farmer's market tonight. A bunch of different heirloom apples too!

This morning I had a blackberry-grape-banana smoothie for breakfast.  Beautiful and the bomb ;)b

Raw celery soup for lunch...very lemony?  Still don't know what to think about it.

And for the finale....vegweb's cheesy bean enchiladas!  The second time I've made them and oh oh oh so good!  Thank you so much vegweb, goddess of all tasties! :)>>>

i can get local apples at the co-op for $1.29. they went up from 89 cents, where they had been for a LONG time.

food today. aww.

breakfast: toast and raw nuts/fruit mix. tea!
lunch: more toast (nausua) and some leftover leek and butternut squash pasta with mixed veg
dinner: PIZZA with bac'n bits and mushrooms.
now: chocolate!  :)>>>

My full day:

Breakfast: Oatmeal with brown sugar and cinnamon, plus extra soy milk.
Snack: Lots of chocolate zucchini bread pieces.
Lunch/second snack: Potato, zucchini, and onion hashbrowns.
Lunch: Homemade tomato soup with grilled cheeze on sourdough.
Snack: Apple-I think I bought honeycrisp (vegan?)..I can't remember.
Dinner: More tomato soup, garlic toast with parsley.
Snack: I'm sure I'll have some more zucc bread.

I'm eating lots of kale tomorrow!

6:00 - Pooh Bear's IBS cereal, cranberry juice
9:00 - banana
11:00 - soba noodles with orange-ginger-PB sauce (what my husband cooked last night)
1:00 - baby carrots and peanut butter
3:00 - 1/2 steamed delicata squash
7:00 - pecan patty (recipe from vegweb - I love these)
10:00 - frozen grapes
12:00 - graham crackers

And way too much tea, because I'm still nowhere near ready for my midterm tomorrow...  :-\

Breaky: two toasted pita rounds, one with PB&J (cherry jam), one with marmite and smooshed avocado. A smoothie made of vanilla soy milk, frozen bananas and cooked (cooled) nectarines.

Snack: a fresh nectarine and some roasted, salted cashews.

Lunch: what was left of last night's cashew alfredo pasta bake. Occupational hazard with making awesome vegan alfredo... inability to refrain from stuffing myself. ;D

'Snack'?: some merlot.

Dinner: baby potatoes boiled with mint, drained and tossed with inferior guacamole (lemon juice; don't have lime). :)

My list may get interesting (read: odd) over the next few days, since I'm using up my fresh groceries and bits and pieces before we move house on Caturday.

I made mix vegetable soup with Tomatos+Filed beans+Sweet peas+Carrots+Spring onions+Cabbage and .
Use quarter spoon of Cummin powder with dash of Clove and cinnamon powders. Quarte spoon of black pepper powder and sea salt.
Cultered it with Mustard seeds and Cummin seeds popped in 2 spoons of cooking oil.

This was enjoyed with Garlic bread. WOW !! :)>>>
