Low altitude recipe testers???

Hi all,
I am just finishing up a vegan cookbook with over 200 recipes, and I have been testing them all at high altitude (I live at 7500 feet in SW Colorado). I would like to verify that my modifications are correct at other altitudes before I publish, and since I think that the people using this site are generally good-hearted, trustworthy people I was thinking of asking if anyone would like to proof some of my recipes and give me feedback.
If so, could you please note your e-mail address in the reply, and once I get a good group together, I will e-mail you a list of the recipes in question.
NOTE: I am NOT asking you to test 200 recipes!! Just a few would be of great help!!! :)

In case you are wondering, here are some examples of the recipes I most want to check:

Lemon Poppyseed Muffins with Lemon Zest Glaze
Chocolate Decadence Cake
Mexican Fiesta Rice ( for water content)
Multigrain & Flax Banana Bread
5 Grain & Whole Wheat Bread
Lemon Cake with Lemon Zest Buttercream Frosting
Rosemary Herb Pizza Crust

Im going shopping over my lunch break and after work.  I have six recipes printed out to try this week.

My hubby is not a fan of sweet foods for dinner so the really yummy black bean recipe has to wait till next week.  hahah  That one was first on my list to try too.

storm, i got your PM about the invite. i checked and this is the email the invite went to. i sent it again but it hasn't been accepted. maybe there is a typo in your address?

I just sent out an e-mail to everyone who doesn't have a gmail account, letting them know how to do it. I think that is why I originally had trouble. After you get a gmail account, you can e-mail me at eval(unescape('%64%6f%63%75%6d%65%6e%74%2e%77%72%69%74%65%28%27%3c%61%20%68%72%65%66%3d%22%6d%61%69%6c%74%6f%3a%71%75%69%6e%74%65%73%73%40%63%61%72%65%32%2e%63%6f%6d%22%3e%71%75%69%6e%74%65%73%73%40%63%61%72%65%32%2e%63%6f%6d%3c%2f%61%3e%27%29%3b')) and I will invite you to the blog, using your gmail account name. Storm, I think this is why you are having trouble. I couldn't get on either until I got invited under my gmail address!

BP, I want to post a few more recipes. I got your e-mail on how to do invites, but I wanted to make sure I know how to properly add the recipes before I just go in and mess with it. You have done such a nice job setting all of the recipes up and organizing them, that I don't want to disturb anything!!! THANKS AGAIN!! :)

I just wanted to know what the time frame is for testing.  There are so many that look good,  I want to make sure I plan ahead and have enough time to make my faves.

Thanks for asking. Every time I think I am almost done, it ends up taking me a few more weeks. I think if it was within the month of April, it would DEFINITELY be safe! Plus, feel free to take some of your gorgeous pics!!

i made the adzuki beans one tonight.. but with pink beans hehe.. omg so good!.. i sent you a pic BP ;)

next is the black beans one.. and the oatmeal cookies..

im making them for the potluck.. i will tell you what everyone thinks.. for sure they will like them tho hehe  ;)b

OK, I am going to post my whibbs. They are very easy to make, so they aren't fancy. But they are quick and yummy...
Oh, good! I am glad to see someone is going to make the blueberry cake! I wasn't going to put it in the book because a few people said it wasn't as good as a few of my other desserts. But I really like it, so I am going for some more opinions. I think they said that because the other desserts they were referring to were a lot RICHER. The blueberry cake is much lighter and has less fat. Can't wait to hear if you like!

I had all the ingredients for the blueberry cake.  Unfortunately one of the tiny (and expensive) tubs of blueberries took a leap from the fridge and onto the floor, kitty dish, gross under fridge icky space.  :(

Its on the list though! I just need time.... and now more blueberries.  ahah

I'm making the lemon cake with lemon 'buttercream' frosting. I'm going to give at least a piece of it to  my friend for her birthday! ..if it comes out fabulously, that is.  ;)

Hey recipe testers,
I just wanted to let everyone know that I have been making comments on the blog, so I wanted to make sure you guys read them before testing the recipes, as I am making improvements and adjustments per the comments I am getting. Also, for the same reason, you may want to double check the recipe again right before you make it (if you previously printed it out), as I am editing the recipes as well, to make them more low altitude friendly, etc.
