I would love to know if anyone has some ideas for a sauce I could use for lasagna that does not contain tomatoes. I did find the pumpkin sauce recipe, which looks promising-has anyone tried to make a lasagna with it? Thanks!
Here's a nightshade-free, macrobiotic recipe posted on the website of a store I shop at. You might like it.

Lady Dragonfly's un-cheese mix makes a great 'cheesy' sauce that I think would be really good with lasagna. Layer with some mushrooms & fresh chopped spinach or whatever veggies you like.

In Crescent Dragonwagon's Passionate Vegetarian, she gives a recipe for a "Macro-Red" sauce. I haven't tried it, but everything I have tried has been delish. This recipe uses butternut squash and beets, along with the expected aromatics and herbs. Like I said, I haven't tried it, but I think the veggies would give the sauce a good consistency.
