Which Veganomicon recipe should I make with my omni sister?

My omni sister is coming to visit and we are gonna cook something from VCON. What do you think? Chickpea cutlets?
She does like tofu a lot as well.
Something a little bit different but not too hard, I think.
The Leek & Bean Cassoulet is fabulous! My nonveg boyfriend really likes it, also.
Chickpea cutlets are very omni-pleasing. I really liked the Penne Vodka (served with the easy leafy greens and garlic bread!). You could totally go with the cutlets though, and mashed potatoes with jalapeno corn gravy!

Dude, I was just thinking cutlets with mashed potatoes! And some kind of vegetable. I think that will be solid. My family eats pretty plain, and she loves chickpeas, so I think these will be fun. And I've never made them before.
and you could make the jalapeño onion cornbread!

Dude, I was just thinking cutlets with mashed potatoes! And some kind of vegetable. I think that will be solid. My family eats pretty plain, and she loves chickpeas, so I think these will be fun. And I've never made them before.
Definitely fry them! I've baked them and they came out super dry and boring. Fry them up, serve them with mashed potatoes and smother everything in the jalapeno corn gravy!!!! You could get away with basic steamed kale with a good balsamic as a dressing. I think the flavors would work very well together.
The chickpea cutlets are a good idea but be sure to make a gravy or sauce to go with them. I like the herb scalloped potatoes with them as well. Have fun!

I did almost just that! Frying them was so easy and good. She doesn't really like sauces on things, so she had hers plain, but they were great! And I made the lemony roasted potatoes from Vcon as well as some kale. Excellent combo. It was funtimes.
