Yummy Mock Chicken Salad

What you need: 

1 (15 ounce) can chickpeas
1 green pepper or celery, diced
1/2 onion, diced
1/2 cup vegan mayonnaise or ranch dressing (I use Nayonaise)
salt and pepper, to taste

What you do: 

1. Pour the chickpeas in a medium bowl, and mash with a potato masher until chunky.
2. Toss in green pepper, onion, dressing and seasoning and stir.
3. You can serve it by itself, in a wrap, or on a sandwich with a big fat slice of tomato.
Delicious! I have served this to plenty of meat eaters and they love it!

SO HOW'D IT GO?

this taste absolulty nothing like chicken salad... but it still tastes real good. It goes nice on toasted bread wit pickles and a little musturd. yay.

I only had ten minutes, max, to make a dinner to take with me somewhere where I knew there wouldn't otherwise be anything for me to eat.

This took probably 5 minutes!  I used celery, green peppers, onion, and salt and pepper.  Next time (because there WILL be a next time, probably many!) I'm going to try out a few different things that others have suggested,  perhaps dill relish, garlic, mustard?
And I'm thinking of eating it on a pita or cucumbers, rather than straight out of the bowl, although it was fantastic!!

Honestly, this is one of the best recipes on here. I've been busy with work  lately, and I haven't had as much time to devote to cooking as I used to. I made this today, expecting an OK sandwich, but wow. What taste!

I changed a few things:

I added a few drops of mustard to the mix, green onions (along with the white), i added a minute touch of celery salt (instead of plain salt), both celery and green pepper and some curry. I served it on a whole wheat pita lined with cucumbers, a piece of vegan cheese and a line of yellow mustard. Had a carrot and some lettuce on the side.

If you haven't tried it, you should!

i just finished this for dinner.  i only added the veganaise and some red grapes & ate it straight from the bowl.  really simple & really good.

Very nice! I added a few coocked vegetables like sweet corn and diced potatos and carrots. It was really nice. Thanx a lot!  ;)

This was amazing.  I used a tofu mayo I made from silken tofu instead of the Nayonaise (couldn't find) and I added raisins.  It's so good and does taste surprisingly like chicken...with a beany aftertaste lol.  It did come out somewhat wet, but I think that might have been due to my failure to drain the chickpeas and tofu properly.  Yummy, and quick and easy to make.  GREAT LUNCH DISH...I'm sick of tofu sandwiches

This was so yummy!  I added chopped green onions, yellow bell pepper and chopped pickles and used a vegan ranch dressing, I loved it!  I was never a huge fan of chicken salad, maybe that's why this reminds me more of tuna salad.  I think next time I'm going to try grilling the sandwich with some vegan cheese to make a "tuna" melt!  Thanks for the great recipe!!  ;D

Wow, I think I just found my lunch for the week.  This is great stuff.  I put in celery instead of green pepper, though.  That's just my preference.  I also added a pinch of "chicken bullion powder" to the chickpeas before mashing them up a bit to add a little more chicken flavor.  I have Nayonaise in mine, and it's fantastic.
