York-A-Like Peppermint Patties

What you need:

1/3 cup corn syrup
1/4 cup vegan margarine spread, softened (I use Earth Balance whipped)
1-1/2 teaspoons peppermint oil or extract, or to taste (I use more)
4-3/4 cups powdered sugar
1 (12-ounce) bag chocolate or carob chips

What you do:

1. In a bowl, combine syrup, margarine, and peppermint; whip with an electric mixer. Add sugar by the cup while mixing. You should end up with a crumbly, sort of dry bowl of stuff.
2. Pick up a small handful of stuff and start to press it into shape. The size you want is up to you. They are so rich that smaller is better. This process is a lengthy one. It's easiest to use a cookie sheet covered with wax paper/plastic wrap to place them on.
3. Melt the chips until creamy and stir-able. Take it off the heat so it doesn't burn.
4. Coat the patties with the chocolate. This is the messy part and I haven't found an alternative way without special equipment. None the less a fun awesome recipe to do alone or with family.

okay, so this is basically the best recipe ever!  sooooo good. so far, i've tried mint extract, orange, raspberry, and almond. the orange and mint are my faves but raspberry is also delicious. with the fruit extracts, i ended up using more because they're not as strong as the mint. i didn't try the almond one because there weren't any left by the time i got to them. :( anyways, they are absolutely wonderful and every other synonym for wonderful you can think of!!! and actually fun to make too, so double bonus! yay! if you don't have wax paper, upside down cookie sheets work very well; maintain their shape and all. okay, i need to shut up now...

I was really excited to make these because mint & chocolate candy (junior mints more than yorks, really) was my favorite back when I was only moderately vegetarian.  And I wasn't disappointed!

I tried to make them a tiny bit healthier by subbing brown rice syrup for the corn syrup and using about half as much powdered sugar--I made it in the food processor, and by the time I'd put in 2 1/2 cups, the texture was fine, it didn't need any more.  This is still so much junkier than we usually eat--my husband said it was so sweet that just one completely satisfied his sugar craving.  Which is great, but I wish there were a way to make them a little bit healthier.  Some of the other comments convinced me not to try to sub anything for the powdered sugar--did anyone do that successfully?

Anyway, flavor-wise, these were *amazing.*  I think I've now found a way to make nearly all of my old favorites vegan.

:D these are absolutely the BEST!!! They are so delicious and came out perfectly. They're even fun to make, despite all the mess- or maybe that's what makes it fun... Definitely a keeper, thanks!!  :D

an idea for less mess--put a cookie sheet over a second bowl or pot, and pour the chocolate over the mint....they'll get coated and the extra will just drip into the other dish! This just suddenly sprung into my head...now i have to go home and try making theses!!

my dad never eats anything i make, and he kept sneaking to the freezer to get more.
i was never a huge york patty fan, but these are really good, especially in the freezer.

Another way you can give the mint patties more of a "york" shape is to put the mint dough between two wax paper and roll/flatten down to 1/2 to 1 inch thickness and cut the circle shape with a biscuit cutter, and put it in the freezer for 15-20min or so. After taking it out of the freezer avoid touching it with your hands (heat from your hand will make it harder to handle the patties) instead use two forks to pick and dip the patties into the melted chocolate. Hope that was helpful to some of you.

Nialee, your peppermint patties look like they came out of a fancy candy box. How did you get them so perfectly shaped like that?

I used a mold. I added corn syrup and earth balance to the chocolate and melt it on top of a double broiler to smoothen out the chocolate.

For getting the chocolate on....

I would use mini muffin pans or alternately tiny candy paper cups.  You can melt the chocolate and using a kitchen brush, brush the chocolate into the cup, drop in a ball of "goo" and drizzle more chocolate on top, filling in the gaps (you can't have too much chocolate, right?).  It is how French pastry chefs do it, with a good quality pastry brush.
