Wine Cookies

What you need: 

3 cups flour

1/2 cup turbinado raw sugar

1 tbsp baking powder

1 tsp sea salt

1/2 cup olive oil

1 1/2 tsp vanilla extract

1/2 cup wine (I used Reisling, but you can use any kind you like. White or Red)

Sugar (to sprinkle on top)

Cinnamon  (to sprinkle on top)

Nutmeg  (to sprinkle on top)

Ginger  (to sprinkle on top)

 

 

What you do: 

1. In a large bowl, mix your dry ingredients (flour, sugar, baking power, and salt)

2. add olive oil and vanilla and mix very well

3. add wine and mix very well

4. refrigerate the dough for 10-15 minutes (this step is optional but I recommend doing it because it will make the dough less sticky and a little more managable)

5. preheat your oven to 350 F

6. roll the dough, cut out strips about 1/2 inch thick and form into ring shapes, twists, or pinwheels

7. bake at 350 F for about 18-20 minutes or until bottom of cookies are golden brown

8. In a small bowl mix a generous amount of sugar and cinnamon and a few pinches of nutmeg and ginger. Sprinkle atop the cookies.

Note: Italian wine cookies are not meant to be soft and chewy like most American cookies. They are harder and crunchier than regular cookies. They are usually served during Christmas time with tea or coffee (great for dipping). Enjoy!
