Whole Wheat Banana Bread Chocolate Chip Cookies

What you need: 

6 ripe bananas, mashed
1 teaspoon vanilla extract
4 tablespoons vegan butter (I use Smart Balance light)
2 cups whole wheat flour
1/2 to 1 cup sugar, to taste
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
handful vegan chocolate chips or carob chips

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Grease a cookie sheet. Add vanilla extract and butter to mashed bananas, and stir.
2. Stir in dry ingredients and chocolate chips. Mix well. The dough may seem runny, but this is normal.
3. Drop dough by tablespoon on prepared sheet, and sprinkle more sugar and cinnamon on top. It may be a bit messy putting them on the cookie sheet.
4. Bake for 12 minutes and let cool on a cookie rack for about 5 minutes.
These cookies will have a cake like texture but they are very tasty. They are very soft but you will want to eat them the day you make them because they will get pretty hard if they sit out for a few days. I hope you enjoy!

smart balance isn't vegan. it has whey in it.
