Who Knew It Was Vegan Pumpkin Cookies

What you need: 

nonstick spray
2 cups brown sugar, firmly packed
2 cups canned pumpkin
1 cup vegetable oil
2 teaspoons vanilla
4 cups all-purpose flour
2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon ginger
1 cup nuts, chopped
1 1/2 cups raisins, optional

What you do: 

1. Preheat oven to 350 degrees F, and grease a baking sheet. Beat vegan sugar, pumpkin, oil and vanilla.
2. Sift together dry ingredients. Stir into the pumpkin mixture until smooth. Blend in raisins and nuts.
3. Drop by spoonfuls on prepared baking sheet, and bake for 12-15 minutes.

SO HOW'D IT GO?

These are my new favorite vegan cookies! I used pecans and substituted vegan chocolate chips for raisins, and topped them with vegan chocolate/ginger icing. :D

Yummy yummy yummy in my tummy! This was the first vegan recipe I ever tried, and helped greatly in my decision to become vegan. So good, even without nuts, but they definitely take these to another level of tasty. Also - I omit the raisins, because I'm not a huge fan. I made these for a friend that couldn't believe they didn't have egg or dairy, she was dumbfounded and asked for the recipe. So good!

I made these at work today, for I am the resident cook at my health food store and I give away samples of what I cook. OMG, people were loving these. I can't wait to make them at home.

hi kiri, i recognised the tiki!  I'm also from New Zealand.  So nice to hear of somebody using real pumpkin!  Our New Zealand cooking habits are so different from the US.  I don't think we use so much processed food, or maybe I am just judging everything by my own eating habits, who knows?  Anyway, it's the first time I've seen anything remotely New Zealand-ish on this site and so I wanted to comment.

Americans, on the whole, do eat a lot of processed food. However, canned pumpkin IS real pumpkin and just pumpkin. It just saves you work and is a great pantry staple to add fiber, texture, flavor and nutrients to myriad dishes. I also keep canned butternut squash and sweet potatoes in my pantry for quick soups, etc.

These cookies are delicious, I made them for Thanksgiving<3 Could easily have been made into cupcakes. My omni boyfriend loved them and wants to make another batch already.

These were so good. The texture reminds me of those old lemon Archway cookies that I used to love, and haven't found a good substitute for. I made these for my son for his first Halloween, I poured simple sugar glaze on them and sprinkled with orange and black sprinkles. He absolutely loved them. I took them to a family party and everybody raved over them, even the non-vegs. I also love it because I love pumpkin but I don't like pumpkin pie, it's a wonderful departure from traditional pudding type pumpkin dishes.

Amazing cookies! I added another cup of pumpkin, cut the oil down to 3/4, doubled the spices, added vegan chocolate chips, and substituted 4 cups white flour for 2 white and 2 whole wheat. My husband ate a dozen last night to himself.

These cookies were very good, you can definitely taste the pumpkin, they are just not very sweet. None the less, everyone loved them. This :) recipe makes so many cookies, its awesome.
