Very Simple Blueberry Muffins
What you need:
1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries
What you do:
1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?
I didn't use cups, I just sprayed pam in my muffin sheet, then took a paper towel and wiped it through all of them so they were coated. They just popped right out. Also, I use a heaping 1/4 cup of applesauce...maybe that makes a difference? I'm not sure if brown sugar is different, that could be it? Also, roll your blueberries in flour before you mix them in...I hope these ideas help!
I use this recipe all the time and sub different fillings in, like slices of banana (which gets mashed when i mix) and shredded carrot or zucchini and chocolate chips (rolled in flour first).

I edited mine a little bit too:
1 cup whole wheat flour
1/2 cup rolled oats
1/4 cup applesauce (instead of oil)
a few dashes of cinnamon
and sprinkled sugar and cinnamon on top
I just made these with that recipe and used brown sugar, but the muffins are like glued to the paper cups...
why did that happen? how do you prevent that??
please help!
actually i just didn't wait long enough for them to cool... hehe.. they turned out really well, i just should have added more cinnamon
probabaly because you didn't use any oil. you could try doing 1/2 oil, 1/2 applesauce

I didn't have any muffin tins so I used an 8X8 pan and it came out perfect!! I also used chocolate chips instead of blueberries since I didn't have any. I'm sure the blueberry version tastes much better though but I'm not complaining!!!

I just made these again, but this time instead of blueberries, I did banana and chocolate chips and put shredded coconut on top. OMG they're so good, I can't wait to try more variations with this recipe!!!

i made this with what flour, applesauce instead of oil, and brown sugar. very good.
these are great, i used 50/50 white, whole wheat flour, sucanat, and made my own crumb topping similar to the one posted above and they came out great! a very healthy yet decadent breakfast ;)b
I don't have a muffin pan so I poured it into a 9 X 12 loaf pan instead, and used the crumb topping from another wonderful person's recipe on vegweb:
CRUMB TOPPING:
1/4 cup sugar (50g)
1/8 cup (over full) flour (20g)
2 tablespoons soy margarine (30g)
3/4 teaspoons cinnamon (scan't 2g)
