Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

This recipe is so easy, I always have all of these items on hand. I made mini muffins, by greasing the pan and baking for 18-20 minutes. Turned out fabulous like always. Thanks for the recipe!

Just to be clear, I used melted earth balance margarine--the stick kind, not the ones in the tub.

Well, the ingredients specifically call for "frozen blueberries" so, I would say yes  ;)

Actually, I just made these last night with a frozen mix of blueberries, raspberries, and blackberries.  They turned out great.

My goodness, what a blip on the brain.

Made them today with melted earth balance shortening and unsweetened soymilk. Added an extra spoonful sugar and a touch of vanilla. Used frozen blueberries directly from freezer and put a little flour on them as suggested above. They came out great. Next time I will use slightly fewer blueberries since my kids would prefer them that way.

I had run out of baking powder, so used 1.6 tsp baking powder and 1 tbs vinegar. They didn't rise very high, and they have a kind of odd aftertaste though. So--this is not a good substitution.

Like most people have already pointed out... very simple recipe.  Very good too!  Have made several batches, switching up the recipe a bit each time.  I can't seem to do any wrong!  They all turn out delicious.  Thank god I've been able to give a lot of them away, otherwise I think I'd be doing a great Santa impersonation with a muffin-top belly!

vigilant20: if your blueberries are that tart than you may want to consider switching kinds...They should be sweet on their own and not terribly tart at all.

I just made these muffins and made several substitutions.... applesauce instead of oil, part wheat flour, some oatmeal, some sugar ontop before baking, etc. as was suggested in previous posts. They were DELICIOUS!!! I can't believe how healthy they are!! I had them both warm and cool..not sure how i like them better. They are not too sweet which is good...
