Veggie Spaghetti

What you need: 

1 jar of your favorite spaghetti sauce
regular extra firm tofu (I use 1/4 of package)
1 chopped garlic clove
1 chopped (small) onion
2 chopped celery stalks
3 carrots, cut into slices
1 tomato, diced
1/2 teaspoon basil
1/2 teaspoon parsley
1/2 teaspoon oregano
nutritional yeast (optional)
salt and pepper to taste

What you do: 

Cut tofu into slices. Mash with a fork to obtain a "scrambled egg" like texture.
Put all ingredients into a saucepan, stir, and heat.
Serve over your favorite pasta!
(Note: If you don't like the consistency, my boyfriend enjoys putting the carrots, celery and onion into the food processor first. I prefer the chunks.)
