Vegetable Soup for Summer

What you need: 

1 leek, white part chopped and some of the greens sliced
3 large or 15 baby carrots, chopped
1/4 large white onion, finely chopped
1 clove garlic, pressed
3 red potatoes, unpeeled, chunked
1 medium zucchini, chunked
2 cups veggie pasta, any shape
1 red bell pepper, chopped
1 yellow bell pepper, chopped
sea salt & freshly cracked pepper to taste

What you do: 

Boil 1.5-2 quarts water. Add carrots, onion, garlic, and leek greens. Boil for 15 minutes.
Add potatoes, zucchini, and pasta. Cook 10 minutes.
Add bell peppers, salt, and pepper, cook an additional 5 minutes, and serve!

SO HOW'D IT GO?

I made this yesterday with some changes.  I left out the pasta and added some brown rice and green lentils.  I added some fresh parsley and dried basil and thyme.  I thought as it was it was pretty watery and uninspiring so I blended half, put it back in the pot and it was much nicer.
