Vegan Soyless Tostadas

What you need: 

1 cup refried beans
3 tablespoons red enchilada sauce
2 avocados
1 roma, finely diced
ground cumin, lime juice, salt, pico de gallo seasoning (or cayenne if you can't find it) to taste
4 tostada shells
shredded romaine or cabbage
finely diced red or green onions
cilantro (optional)
diced romas
jarred jalapeno slices
if necessary, whatever else floats your boat

What you do: 

1) Make guacamole: Mash your 2 avocados in a bowl, add finely diced romas, a dash of lime juice (be careful not to add too much!), salt, cumin, and pico de gallo (to taste). Set aside.
2) Mix refried beans with enchilada sauce in a microwave safe bowl. Microwave for 2 minutes.
3) While beans are in the microwave prepare the rest of your veggies/ toppings.
4) Once beans are ready mix them around again. Spread beans over your tostadas first, then onions, cilantro, guacamole, lettuce, tomatoes, and jalapenos. Enjoy!

;)b YuMMY! I mixed some of my left over brown rice and cayenne pepper with the refried bean/enchilada sauce mixture. I also added some black olives on top. I loved this recipe mainly because I made everything I could from scratch! I feel like such a Holly Housewife :devilwink:

Oh, man.  These were so good!

Technically, I did not make tostadas because I piled all of the listed toppings (except the romaine/cabbage) on to a thin-crust whole-wheat pizza crust instead.  Not authentic, but it still tasted awesome.


Oh boy. That's going straight into my recipe collection. <3
I can't wait to try it when I get back home after this semester in college. I've been craving beans for FAR too long...


Super easy and tasty!  I make these all the time.  I usually just pile diced avocado on top, since I'm lazy, and add tons of the green Tabasco sauce.  =)
