Vegan Roast
What you need:
1-1/2 cups whole grain nugget cereal
1-1/2 cups hot soy milk
2 tablespoon margarine
3/4 cup chopped nuts-walnuts or pecans
1/2 teaspoon salt
Ener-G Egg Replacer for 2 eggs
1/4 cup finely chopped onion
3/4 cup finely chopped celery
What you do:
Combine all ingredients, mix well. Pour into a Pam-sprayed loaf pan. Bake at 350 degrees for 45 minutes.
This loaf may be served with a gravy of your choice or with ketchup. Wonderful!

SO HOW'D IT GO?
I just tried this and while it was very tasty - it never did set. I cooked it about an hour and a half, but it never firmed up. We ate it anyway, but I'm wondering if there is any way to make it less mushy in the middle???
Kind of like Grape Nuts, but those aren't vegan. Kashi makes a great whole grain nugget cereal. You can pick that up in Whole foods or HFS. I've even seen it at some major grocery chains.
what is meant by 'whole grain nugget cereal'?
