Vegan Oatmeal Raisin Cookies
What you need:
3/4 cup vegan margarine
1/2 cup sugar
1 cup packed brown sugar
1 teaspoon vanilla
1/2 cup nondairy milk (I use soy)
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon cinnamon
1 cup walnuts, finely chopped
1 cup raisins
3 cups rolled or quick cooking oats
What you do:
1. Preheat oven to 350 degrees Fahrenheit. Beat together the sugar, brown sugar, margarine and vanilla until smooth and fluffy.
2. Add the milk and mix until combined. Add the flour, baking soda, salt and cinnamon, and stir until well mixed.
3. Add the remaining ingredients. Batter will be very thick.
4. Drop by 3" balls onto cookie sheet and flatten slightly. Bake for 12 to 15 minutes, or until done.

i followed the recipe exactly. these cookies were very yummy but stuck to the pan and fell apart easily when i tried to pry them off. the second batch, i greased the pan and shaped the dough into more of a ball and that helped a lot and gave them a chewy soft middle.
I made these last night. Had to some substitutions since the bf didn't have all the ingredients/ wanted to add apple butter for some reason. I actually used quick cooking oats (the kind that only takes 2 minutes to cook) and instead of vanilla we Amaretto. We also added about 2T of apple butter and reduced the soy milk by 1/4c. So basically it was a completely different recipe ha ha. I did have to cook them much longer than 12 minutes, probably more around 20 minutes but I believe that was due to the quick cooking oats being too mushy once they got wet.
They came delicious and I had two twenty something year old men nodding there heads in approval of delicious vegan cookies. Thanks for the recipe!
Me and my two 8 year old neices baked these last night. The three of us enjoyed them soooooooooooooooo much. The only thing is that the next day they were still soft but stuck to one another. Should I have put them in the fridge? Other than that the girls enjoyed their first cookie baking experience. Ours weren't as full as joeynogi's, they were more flatter, but I think we may have flatten them a bit too much.
These taste great! However, mine did not turn out like cookies! hehe....they flattened out and even after i waited till they cooled to take them off the tray they fell apart. Should I have added more flour?
A little more flour wouldn't hurt. They're not hard like some cookies, but they come out pretty good. Check out my site planethippie.com

this recipe is great! i mixed it up a bit and made oatmeal apple cookies instead, though. with the batter that was left over from the first batch, i added vegan dark chocolate chunks and they were delicious. turned out very fragile, though.

oh my gosh.... scratch that last post.... i just tried one.... abolutely delicious.... all i did was add a little bit extra whole grain flour and they are perfect.... thank you... yum yum!!!!
