Vegan Chocolate Frosting

What you need:

1 cup vegan margarine, at room temperature
4 cups powdered sugar (make your own by blending sugar and cornstarch)
dash salt
2 tablespoons vanilla
4 tablespoons nondairy milk
1/2 cup cocoa powder

What you do:

1. Blend margarine until mushy.
2. Add vegan powdered sugar, salt, vanilla, milk, and cocoa (all remaining ingredients).
3. You can add in more milk to make it a bit smoother, but not too much. Spread on cake and enjoy.

SO HOW'D IT GO?

Amazing! This frosting is so fabulous. I also halved it for a pan of brownies, and it was perfect. I sprinkled coconut and pecans on top! Mmmmmm  :)>>>

delicious!  i halved the recipe to cover the dozen cupcakes the 'white cake' recipe makes and from there i divided it into 3rds.  the first third i left vanilla, the 2nd 3rd i made into chocolate, and the last of it i made into chocolate mint by adding a splash of peppermint extract (which i then topped with a 1/4 of a mint oreo).  they were all so good.

Good recipe!  We added a little flour to it to make it less sweet, and it turned out great! Thanks!

because i'm an idiot, i used granulated sugar instead of powdered. any tips on how to fix it? i dont have enough soy milk to make another batch!  :-[

Perhaps try heating it slowly over low/medium heat?  This should melt the sugar and create a smoother consistency.  However, I'm not sure how the vegan margarine and other ingredients would hold up.  Test a little bit over the lowest heat before working up to more heat and the rest of the frosting.

Fabulous!  I made a half-batch substituting almond milk for soy milk, and then added a little almond flavoring with less vanilla.  I frosted a "Super Moist Chocolate Cake" (another great vegweb recipe!) that I cut in half to make a small layer cake- there was just enough frosting to be able to thicken up 1/4 cup for sticking the layers together and then to coat the outside.  FYI, to decorate on top of this icing, you can mix vegan powerdered sugar with half of an "egg" of egg substitute to get a nice white icing for writing names, etc.  A little secret:  I'm not a vegan! but my roomate is, and I'm passionate about baking, so now I'm keeping the kitchen vegan so I can use her as a guinea pig!  This is her birthday cake, and it definately lives up to my standards!  mmm...

This recipe is perfect.  I had a major, major craving for chocolate frosting, so I quartered the recipe and ate it straight out of the mixing bowl (not my proudest moment).  It was so awesome.
