Un-Cheeseburger Macaroni

What you need: 

2 cups pasta (I use whole wheat penne)
3/4 nondairy milk (I use soy)
1/2 cup Dragonfly's Bulk Dry UnCheese Mix
1 vegan burger patty, cooked and crumbled (I use Boca)
1 tablespoon ketchup
1/2 tablespoon mustard
1 small tomato, diced
1 small red onion, diced
paprika, to garnish
parsley, to garnish

What you do: 

1. Cook pasta according to package directions, drain, and set aside. In same pot, add soy milk and dry uncheese, whisk and cook over medium low heat until thickened.
2. Add burger to uncheese mixture. Add drained pasta to mixture, toss. Squirt in ketchup, stir. Squirt in mustard, stir.
3. Add tomato, and toss again. Add the onions, and toss. Garnish with paprika and parsley.
The amounts above make enough for me and my two year old son for lunch. It's so easy and you really can't mess it up regardless of what order you put everything in. Add whatever you like on a "burger," diced avocado, mushrooms, etc.

I made this for my 18month old daughter and it was a huge hit. All I changed was the pasta to macaroni so she could eat it with her fingers. Thanks for sharing:o)

Instead of the burger crumbles, I used crumbled tofu, fried in oil with a splash of red wine and a few shakes of soy sauce. I used a little salsa (a few tablespoons) instead of the tomato, and I used a little onion soup mix (about a teaspoon) instead of the onion. I also added liquid smoke to taste.

This was so freakin good man. I think it is even better than the Hamburger Helper I used to love as a kid. At first I was like "ehhh" when I saw that there was ketchup and mustard in the ingredients, but it was actually pretty delicious. It really tastes a lot like a cheeseburger, unlike the simple meat and cheese taste of Hamburger Helper. Now I think I need to go buy some more brown rice macaroni (gluten-free) so I can make some more.

By the way, I also use raw almonds instead of cashews for my cheese mix  ;)b


I don't know where you live.  Here in the northeastern USA, all the regular grocery  stores carry Boca products in their frozen food sections.  They also have Lightlife & Yves veggie crumbles in their healthy cooler sections.  These are pre-crumbled burgers which would also work well.


i think this one is good,but i cant find vegan boca burger,pls someone tell me where to buy that?


I got the idea for my dish from this recipe...but did something quite different. I used a mac and cheeze sauce recipe from a blog, then mixed it with some leftover brown rice, steamed broccoli and cauliflower, and made some vegan bacon crumbles for the top. Mmmmm!


Iv never heard of this dragon chesse thingy...that picture looks so good, you just have no idea how I am drooling here....ummm. I think that it looks good enough to try...very, very soon.


Yep, Dragonfly's Uncheese mix makes life sooooooooo easy!

i love that you use dragonflys uncheese mix!!! i've used it in so many different ways.

oh, and this recipe looks like major comfort food
