Ultimate Vegetarian Chili

What you need: 

3 tablespoons olive oil
3 onions, chopped
1 tablespoon chili powder
1 tablespoon ground cumin
1/4 teaspoon cayenne pepper
2 peppers, chopped
3 garlic cloves, chopped
3 tablespoons unsweetened cocoa powder
1 large can (28 ounces) tomatoes, undrained, chopped
1 cup water
1 (15 ounce) can red kidney beans, rinsed and drained
1 (15 ounce)can black beans, rinsed and drained
2 cups fresh or frozen corn
1/2 cup bulgur
salt and pepper, to taste
cilantro, for garnish, optional

What you do: 

1. In a large pan, saute the onions and spices with oil. Add peppers and garlic for 1 minute.
2. Add cocoa, tomatoes, and water; bring to a boil. Add kidney and black beans, corn and bulgur.
3. Reduce heat to low and simmer, uncovered, for 15 minutes. or until bulgur is cooked. Add salt and pepper, to taste. To serve, sprinkle with cilantro.'

SO HOW'D IT GO?

This was okay... i added half as much coco powder and am glad i did because it was overpowering,  2 cups broth in place of the 1 cup water, mixed in a couple tablespoons of cilantro, topped the chili with avocado slices, and mixed in some ketchup... i think the avocado and ketchup saved the chili for me.

This was the BEST chili I've ever had.  My sons loved it and the recipe made enough for at least 8.  I can't wait for the cold weather to come so I can make it often.  Thanks!

This was AMAZING! Thank you so much for sharing it, it will definitely be one I make again and again. I didn't have any bulgar, so I just omitted that and it was still excellent  :)

I made this yesterday afternoon to compliment the rainy weather and it was SOOOOOOOOOOOOOOOOOO delicious. I think the best chili I have ever had. I added some veggie crumbles and habenero too but it certainly would have been fine without. Im going to be making this dish a ton!

This very SO delicious! I loved it! It got better the next few days after I made it. I followed the recipe word for word, so I would suggest to everyone else to do the same. Goes great with some vegan cornbread! Awesome!

Mighty tasty.  I found it needed more spice so I put in a lot more chili powder, cumin and cayenne.  Also added mushrooms and a couple dashes of balsamic vinegar.

Excellent chili!  I especially love the texture that the bulgur wheat gave it.  I used all the ingredients listed but only added 1 onion (which was perfect...I think 3 would have been way too many), 2 tbsp. of cocoa powder (seemed to be just right) and 1 cup of corn.  The recipe makes a ton...I will have lunch for the next two days plus still some left over to freeze!

The only thing I omitted was the bulgur. I couldn't find it in the supermarket, and we don't really have health food stores around here. Next time I make this I will try a little harder to find it.

THis was delicious!  I used some mock hamburger meat as well as half a block of crumbled extra firm tofu instead of the bulgur.  It was super filling, and super delicious.  This will be made many many times over the course of this winter!
